6 tablespoons salted butter
2 cups small-cubed ham
1 1/4 cups grated Swiss cheese
1 1/4 cups grated Monterey Jack cheese
4 cooked boneless, skinless chicken breasts, cut into cubes
1/2 cup panko breadcrumbs
1/4 cup all-purpose flour
2 cups milk
1 cup chicken broth
2 tablespoons Dijon mustard
1/2 teaspoon cayenne
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9-by-13-inch baking dish with 1 tablespoon butter.
  • Put the ham on a paper towel-lined plate and microwave for about 3 minutes to reduce the moisture content. Mix together the Swiss and Monterey Jack cheese in a bowl.
  • Put about a third of chicken in a layer in the bottom of the prepared baking dish. Top with half the ham. Sprinkle over 1/4 cup of the mixed cheese. Repeat 1 more time, then finish with a layer of chicken.
  • Melt the remaining 5 tablespoons butter in a skillet over medium heat. Put the panko in a bowl, pour in half of the melted butter, mix well and set aside.
  • Add the flour to the remaining butter in the skillet and cook for 2 to 3 minutes, whisking out any lumps. Whisk in the milk, broth, Dijon and cayenne and let it cook until it begins to thicken. Remove from the heat and stir in 1 cup of the cheese until melted. Season with salt and pepper.
  • Pour the sauce over the casserole. Sprinkle over the remaining 1 cup cheese, then the panko mix. Bake until the top is browned and the casserole is bubbling, 25 to 30 minutes.

4 cups cornflake crumbs
1 cup grated Parmesan cheese
¼ cup butter, melted
10 cooked skinless, boneless chicken breast halves - cut into strips
salt and ground black pepper to taste

1 pound cooked ham, diced
½ pound sliced fresh mushrooms
1 bunch green onions, sliced
1 (10.75 ounce) can condensed cream of chicken soup
1 cup sour cream
2 tablespoons butter, melted

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease a 9x13-inch baking dish.
  • Mix the corn flake crumbs, Parmesan cheese, and 1/4 cup melted butter in a large bowl, then spread about 2/3 of the crumb mixture into the bottom of the prepared baking dish. 1/2 onion, diced

1 cup Progresso™ chicken broth (from 32-oz carton)
1/2 cup milk
2 cups shredded deli rotisserie chicken

2 cups cooked rice
1 1/2 cups shredded Swiss cheese (6 oz)
3/4 cup Progresso™ Italian style bread crumbs
1 tablespoon melted butter
Chopped fresh parsley for garnish, if desired

Steps:

  • Heat oven to 400°F. Lightly grease 10-inch round baking dish with olive oil; set aside.
  • In 10-inch skillet, heat 2 tablespoons olive oil over medium-high heat. Add onion; cook until tender and translucent, stirring occasionally. Add flour; stir to make a roux. Cook roux 1 to 2 minutes or until lightly golden. Gradually beat in broth with whisk, followed by milk, and simmer until slightly thickened into a gravy.

You can use shredded cheese instead of sliced, add broccoli or more meat, use homemade biscuits... it's pretty forgiving. These are just the ingredients I happened to have on hand that day, but feel free to adjust to suit your tastes.

This is how the magazine described the dish: This casserole has all the flavors of Chicken Cordon Bleu--chicken, ham, and cheese--without all that messy rolling and stuffing! We liked the dish, though it wasn't as creamy as we expected. I followed the recipe as written (copied original recipe below) but added a handful of shredded cheddar cheese to the top of the casserole when it was done and baked for another couple of minutes until the cheese was melted. I also used more ham than the recipe called for because I needed to use up the leftovers. Cook time in my over was about 1 hour for the rice to be tender (recipe calls for 45 minutes).

1 lb chicken tenders
1 (12 ounce) bag broccoli florets, approx 3 3/4 cups

8 ounces ham, cooked and cut 1/2 inch cubes, can use deli ham as a substitute
3/4 cup swiss cheese, shredded
1/2 cup skim milk

  • In large microwave safe bowl, place potatoes and 2 tablespooons of water. Cover the bowl, and microwave on high for 3 to 4 minutes or until potatoes are fork tender, stirring once.

2 box Stove Top chicken stuffing, 6 oz each
1 can(s) Campbell's cream of mushroom roasted garlic soup, 10.5 oz
1/2 can(s) Campbell's golden mushroom soup, 10.5 oz
1 pkg diced ham, 8 oz
2 1/2 lb chicken tenderloins
1 pkg Swiss cheese, 8 oz
1 pkg Muenster cheese, 8 oz
1 pkg French's French Fried Onions (optional -- but highly recommended!), 6 oz

Steps:

  • 1. Preheat oven to 425. Begin by cutting the tenderloins into cubes.
  • 2. Add them to a large rimmed pan with a little bit of water (just enough to keep the chicken from burning to the bottom of the pan).
  • 3. Cover and cook (stirring occasionally) until chicken is completely cooked. This usually takes about 15 minutes on medium-high (times may vary, so just keep an eye on it while you cook).
  • 4. While the chicken is cooking prepare two boxes of stuffing according to the directions on the box.
  • 5. Grease a 9x13 pan.
  • 6. Create a layer of stuffing across the bottom of the pan. For this part, I generally get my hands wet with cold water and do a quick pat down to make the layer nice and flat.
  • 7. Take the Swiss cheese and lay all of the pieces out over the stuffing, creating a thin layer of cheese.
  • 8. When the chicken is completely cooked, remove the pan from heat and use a strainer to remove excess liquid from chicken.
  • 9. In a large bowl mix the diced chicken, cubed ham, 1 can of cream of mushroom roasted garlic soup, and 1/2 can of golden mushroom soup together. (Optional) If adding French Fried Onions to casserole, add half of the package into this creamy mixture and reserve the other half for topping the casserole after it is done baking.
  • 10. Take the cream of mushroom soup mixture and evenly spread it out over the first cheese layer. A spatula works well for this part.
  • 11. When the mixture is evenly spread, take the Muenster cheese and create another even cheese layer.
  • 12. Sprinkle salt and pepper over the top.
  • 13. Cook in the over for 20-25 minutes. Cheese should be melted and casserole will be bubbling (this lets you know it is done). (Optional) If you are using French Fried Onions, cook the casserole for 20 minutes, top with onions, and cook an additional 5 minutes.

  • Add chicken and saute until beginning to brown, about 5 minutes.

  • Top the chicken in each loaf with a slice of Swiss and sprinkle with 1 teaspoon Parmesan.
  • Bake "casseroles" until cheese melts, 7-10 minutes. (For extra browning, broil casseroles on high, 3-5 minutes.).
  • Serve each casserole with reserved cream sauce.

1 chicken, cooked & shredded
1/2 lb deli-style honey ham, thinly sliced
1/4 lb baby Swiss, thinly sliced
4 Tbsp butter
4 Tbsp flour
3 c whole milk - must be whole!
2 Tbsp lemon juice, fresh
1 Tbsp Dijon mustard
3/4 tsp salt
1/2 tsp smoked paprika
1/4 tsp white pepper
1 1/2 c Panko bread crumbs
4 Tbsp butter, melted
1/2 tsp seasoning salt
1 1/2 tsp dried parsley

Steps:

  • 1. Preheat oven to 350. Butter the bottom and sides of a 13x9-in baking dish.
  • 2. Cover the bottom of the baking dish with the cooked, shredded chicken.
  • 3. Rough chop the ham and scatter that over the layer of chicken.
  • 4. Layer the Swiss cheese on top of the ham and chicken.
  • 5. TO MAKE THE SAUCE: Put the 4 tbsp of butter into a medium-sized pot and melt over medium heat. Quickly stir in the flour to make a roux.
  • 6. Without browning the roux, once it is smooth & bubbly, slowly pour in the cold milk. Whisk briskly to make a smooth sauce. Cook over medium heat until the sauce thickens, and you can coat the back of a spoon.
  • 7. Stir in the lemon juice, Dijon mustard, salt, smoked paprika, and white pepper.
  • 8. Bring the sauce to a low boil, then remove from heat.
  • 9. Pour sauce evenly over the casserole, being mindful to get some of it around the edges of the pan.
  • 10. TO MAKE THE TOPPING: Melt the last of your butter in the microwave in a medium sized bowl. Once melted, take the bowl out and stir in the Panko bread crumbs and dried parsley.
  • 11. Layer over the top of your casserole.
  • 12. Bake uncovered for 45 minutes, or until the topping has become golden brown and the casserole is bubbly. Let it sit about 5 minutes before serving. ENJOY!

1 cup plain dried bread crumbs
1 cup oil for frying
8 ounces Swiss cheese, cubed

1 (10.75 ounce) can condensed cream of chicken soup
1 cup milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Beat egg and 1/2 cup milk together until combined. Stir in the chicken chunks to coat, then drain, and coat with bread crumbs. Heat oil in a large skillet to 375 degrees F (190 degrees C). Fry breaded chicken cubes in hot oil until golden brown on all sides, then remove, and drain on paper towels.

1 lb skinless, boneless chicken breasts, cooked and shredded
1 oz very thinly sliced lean ham (deli)
4 oz reduced fat swiss cheese (like jarlsberg)
2 tsp light butter
2 Tbsp whole wheat flour or more
1 c panko crumbs
2 c reduced fat milk
1/2 c fat free chicken broth (if needed)
1 Tbsp dijon mustard
1/2 tsp salt
1 tsp smoked paprika (a must)
1/2 tsp pepper
1 tsp parsley
juice from 1 lemon

Steps:

  • 1. Preheat oven to 350 degrees F. Spray an 8 x 8 casserole dish with cooking spray.
  • 2. Spread chicken evenly along bottom of baking dish and top with the ham. Then layer the cheese slices on top of ham.
  • 3. Sauce: Melt butter in small sauce pan over medium heat. Quickly stir in flour, and mix until just combined, about 30 seconds. Slowly pour in the milk while continuously whisking. continue to whisk constantly until sauce begins to thicken.
  • 4. Add in lemon juice, mustard, paprika, salt and pepper and stir well. Bring sauce to a low simmer while still whisking. Simmer until thickened, about 2-3 minutes. If sauce becomes too thick, thin it with a bit of broth. Remove from heat and pour over casserole.
  • 5. In a small bowl, combine Panko and dried parsley (and additional salt and pepper if desired) and then sprinkle mixture evenly over top of casserole. Lightly mist Panko with nonfat cooking spray.
  • 6. Place in oven and bake uncovered for about 30 minutes or until top of casserole has turned light brown, and the casserole is hot and bubbly throughout.

1 can(s) cream of chicken soup
1/2 c milk
4 c cubed, cooked chicken
1/4 tsp pepper
1/2 lb deli ham, cut in strips
1 c shredded swiss cheese
1 1/2 c shredded cheddar cheese

4 boneless chicken breast halves
1 (16 ounce) bag cut-up frozen broccoli
1 cup ham, diced
4 ounces swiss cheese, diced
1 (10 3/4 ounce) can cream of chicken soup
1/2 cup white wine
1 garlic clove, minced
1 tablespoon butter
salt, to taste
pepper, to taste

Steps:

  • Cut chicken breast into strips.
  • Saute garlic and chicken strips in butter in a non-stick skillet over medium heat until lightly browned.
