1 teaspoon honey mustard
2 cups shredded cooked chicken breast
1/3 cup finely chopped celery
6 slices whole grain bread, toasted
8 slices tomato

4 leaves Romaine or leaf lettuce
4 tiny dill or sweet gherkins

Steps:

  • In medium bowl, mix mayonnaise and mustard well. Stir in chicken and celery until well mixed.

1 whole chicken breast (1 1/2 pounds), on the bone
1 tablespoon olive oil
Coarse salt and freshly ground black pepper
1 1/2 cups mayonnaise, homemade or best-quality
3 tablespoon capers, rinsed
1/2 lemon, juiced
6 slices crusty white bread

Steps:

  • Heat oven to 450 degrees. Place chicken in a small roasting pan. Rub with olive oil, and season with salt and pepper. Bake until a meat thermometer inserted into the thickest part of the breast reads 180 degrees, about 25 minutes. Remove from oven, and cool slightly. Remove chicken from bones, and discard bones. Finely chop chicken (there should be about 2 cups).
  • In a medium bowl, combine chicken, mayonnaise, capers, and lemon juice. Stir to combine. Season with salt and pepper.
  • Toast four slices bread. Spread a thin layer of chicken salad over one slice untoasted bread. Top with a slice of toasted bread. Spread a second thin layer of chicken salad over toasted bread. Top with a slice of untoasted bread. Repeat with remaining bread and chicken salad.

4 Boneless, Skinless Chicken Breast Halves, pounded to an even 3/8-inch thickness
1/4 cup BBQ Dry Rub Spice Mix(salt, black pepper, ancho chile powder , paprika, cayenne pepper, brown sugar, onion powder, garlic powder)
1 cup favorite bottled BBQ Sauce
4 slices PepperJack cheese
8 pieces sourdough bread, cut approximately 4-inches long
1 stick unsalted butter, melted
8 slices applewood-smoked bacon
4 slices red onion, cut about 1/4-inch thick
2 Tbsp. canola oil
4 slices fresh tomato, cut about 1/4-inch thick
Salt and freshly ground black pepper, to taste
4 romaine lettuce leaves, trimmed to fit the bread slices

Steps:

  • The night before the tailgate, cover each chicken breast loosely with plastic wrap and pound each one to a thickness of about 3/8-inch. Season both sides of each breast generously with the BBQ dry rub, then place them in a covered container in the refrigerator overnight. The next day, let the breasts come back to room temperature for about 30 minutes before grilling. Over a grill set on medium-high heat, grill the bacon strips on both sides to a crisp doneness. Remove the bacon to a plate lined with paper towels to drain. Grill the chicken breasts until nicely browned on the first side, about 3 minutes. Turn the breasts over and brush the top side with some BBQ sauce. After cooking for 2 more minutes, place a slice of cheese on top of each breast. When the cheese begins to melt, remove the breasts from the grill to a plate and loosely cover them with foil to stay warm. Meanwhile, brush each onion slice with oil and place them on the grill. Cook for about 3 minutes, then flip the onion slices over and grill until lightly charred. Remove the onions from the grill to a plate. Brush one side of each slice of bread with the melted butter and place them buttered-side-down on the grill. Cook the bread for about 30 seconds, then flip over and grill for another 30 seconds. Remove the bread to a platter. Sprinkle each slice of tomato with salt and pepper, to taste. To assemble, place a grilled chicken breast on each of 4 slices of bread with the buttered side facing up. Place 2 slices of bacon over each breast. On top of the bacon, place a grilled onion slice, then a seasoned tomato slice and then a lettuce leaf. Finally, brush the other 4 bread slices on the buttered side with some BBQ sauce and place them sauce-side-down on top of the sandwiches. Serve immediately.

1 hard-boiled egg, coarsely chopped

3 boneless chicken breast
3/4 c kona coast marinade & grilling island teriyaki
16 oz jar mezzetta deli-sliced mild pepper rings
6 slice gouda cheese
12 slice bacon
18 slice tomatoes
12 butter lettuce leaves
8 oz coleslaw deli style
6 small hoagie rolls

Steps:

  • 1. Slice chicken breast in half horizontally and place in between plastic wrap. With a mallet pound chicken into thin cutlets about ¼ inch thick place in a zip lock bag with Kona coast marinade and marinate 30 minutes.
  • 2. In a frying pan cook bacon until crispy place on paper towel to drain excess fat.
  • 3. Preheat grill on medium high heat and cook chicken for 5 minutes turn and cook additional 4 minutes.
  • 4. Cut rolls in half and place cut side down and grill just until lightly toasted
  • 5. To assemble sandwich on bottom roll place one layer of the pepper rings top with chicken cutlet, a slice of cheese, 2 pieces of bacon, 3 slices tomatoes, 2 lettuce leaves and 2 tablespoon coleslaw top with top bun. Repeat for remaining five sandwiches.
