2 cups sweet Vidalia or yellow onions, peeled and diced small (about 1 medium/large onion)
1 cup carrots, peeled and diced small (about 2 large carrots)
1 cup celery, diced small (about 2 stalks)
4 garlic cloves, finely minced
1/4 cup all-purpose flour
32 ounces (4 cups) low-sodium chicken broth
3 cups milk, or as needed (I use Silk Unsweetened Cashewmilk)
3 cups Russet potatoes, peeled and diced into 1/4-inch cubes (about 3 large potatoes)
1 teaspoon dried thyme
1 teaspoon dried oregano
1 teaspoon salt, or to taste
1 teaspoon pepper, or to taste
pinch cayenne pepper, optional and to taste
2 cups cooked shredded rotisserie chicken (use storebought to save time)
3/4 cup corn (I used frozen and added it straight from the freezer)
8 ounces extra-sharp cheddar cheese (grate it yourself, pre-grated cheese in plastic bags is resistant to melting)
1/3 cup fresh flat-leaf parsley leaves, finely chopped

  • To a large Dutch oven or stockpot, add the oil and heat over medium-high heat to warm.

1 1/2 cups shredded sharp cheddar cheese

1/2 c butter or margarine
1/2 c flour
3 1/2 c half and half or milk
1 Tbsp soy sauce (can be omitted, quite easily)
8 oz velveeta, cut in cubes
2 c chicken (can use canned)

Steps:

  • 1. Heat broth slowly in saucepan. Add all the veggies. Cook over med heat about 15 min. Check to see if veggies are tender but not mushy. In a big Dutch Oven, melt butter over very low heat and add the flour. Stir constantly until smooth. Let cook a min or two, then add milk very slowly. Up the heat just a little to about med, and stir constantly until it's thick and bubbling. Slowly stir in the veggie broth mixture, soy sauce, velveeta, and chicken. Cook until cheese is melted and everything is heated through.
  • 2. Note: my mother in law doubles this recipe, omits the soy sauce, and says everyone eats it up!
  • 3. My daughter eats vegetarian, so for her I would use vegetable broth, and vegetarian meat substitute for the chicken.
