CHICKEN CHEESE CHOWDER WITH VEGGIES, SANDY

Chicken Cheese Chowder with Veggies, Sandy image

My mother in law gave me this recipe Superbowl Sunday, 2020 (Feb 7). We were talking about how my brother in law is limited on what he can make because the kids seem to be so picky about everything between the three of them. He said this was one of the things they would eat.

CHICKEN N' CHEESE CHOWDER

Categories     Soup/Stew     Chicken

Yield 2 1/2 Quarts

Number Of Ingredients 11

4 cups Chicken broth
1 1/2 cups Diced potatoes
1 cup Diced celery
1 cup Diced carrots
1/2 cup Diced onions
1/4 cup Butter or margarine
1/3 cup All-purpose flour
3 cups Milk
1 tbsp Soy sauce
8 oz Processed cheese spread, cubed (1 loaf)
2 cups Chopped cooked chicken

Steps:

  • Combine the broth and the vegetables in a large sauce pan. Cover and cook over medium heat for 15 minutes or until the vegetables are tender. Melt the butter in a Dutch oven over low heat. Add the flour, stirring until smooth. Cook for 1 minute, stirring constantly. Gradually stir in the milk and cook over medium heat, stirring constantly, until thickened and bubbly. Gradually stir in the vegetable mixture, soy sauce, cheese and chicken. Cook until the cheese melts and the soup is thoroughly heated.

Tips:

  • Use a good quality chicken stock. This will make a big difference in the flavor of your chowder. If you don't have time to make your own, use a low-sodium store-bought stock.
  • Don't overcook the chicken. Chicken is a delicate meat, so it's important to cook it just until it's cooked through. Otherwise, it will become tough and dry.
  • Add the corn and potatoes at the end of the cooking time. This will prevent them from becoming overcooked and mushy.
  • Use a variety of cheeses. This will give your chowder a more complex flavor. Cheddar, Monterey Jack, and Parmesan are all good choices.
  • Season the chowder to taste. Salt and pepper are essential, but you can also add other spices, such as garlic powder, onion powder, or paprika.

Conclusion:

Chicken cheese chowder is a hearty and flavorful soup that's perfect for a cold winter day. It's easy to make and can be tailored to your own taste. So next time you're looking for a comforting and delicious meal, give this chicken cheese chowder a try.
