Yield 6

Number Of Ingredients 11

1 tablespoon olive oil
6 (4 ounce) bone-in, skin-on chicken thighs
1 ½ teaspoons kosher salt, divided
¾ teaspoon ground black pepper
1 tablespoon unsalted butter
⅔ cup finely chopped yellow onion
2 cloves garlic, minced
1 ½ cups uncooked long-grain rice
3 cups chicken stock, divided, or more to taste
1 tablespoon finely chopped flat-leaf parsley
1 medium lemon, cut into wedges

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Heat oil in large Dutch oven over medium-high heat. Sprinkle chicken thighs evenly with 1 teaspoon salt and 1/2 teaspoon pepper.
  • Place chicken skin-side down in the Dutch oven; cook undisturbed until golden crisp and easily released from the bottom, about 5 minutes. Flip chicken and cook for 3 minutes more. Transfer to a plate and set aside. Chicken will not be cooked through at this point.
  • Add butter to the drippings and melt. Add onion and cook, stirring often, until translucent, about 3 minutes. Add garlic; cook for 1 minute. Add rice; cook, stirring to coat grains in drippings and lightly toast, about 1 minute. Stir in 3 cups stock and remaining salt and pepper. Bring to a boil. Use a wooden spoon to scrape any browned bits from the bottom of the Dutch oven. Place the chicken thighs over the rice.
  • Bake in the preheated oven until all liquid has been absorbed and chicken is cooked through, 45 to 55 minutes. Add remaining stock if liquid is absorbed before rice and chicken are cooked through. Sprinkle with parsley and squeeze lemon juice over the top.

MAMAW'S CHICKEN AND RICE CASSEROLE

Mamaw's Chicken and Rice Casserole image

I grew up on this recipe, my Grandmother got it from a lady from church at a pot luck a long time ago! She passed it down to my mom and it's always been a family favorite. Quick and easy for school nights, and the leftovers are just as good! You can use less butter on top of course, my Momma and Mamaw always put the full stick on top (gotta love Southern ladies and their butter!)

CRISPY CHICKEN & RICE CASSEROLE

Crispy Chicken & Rice Casserole image

This recipe is absolutley delicious! It is not only tasty but has a wonderful crunchy texture with the almonds, water chestnuts & cornflakes cereal. Recipe is from Southern Living, SEPTEMBER 2003

Provided by JoiD7337

Categories     One Dish Meal

Time 1h5m

Yield 8-10 serving(s)

Number Of Ingredients 13

1 cup uncooked long-grain rice
2 cups chopped cooked chicken
2 (10 1/2 ounce) cans cream of chicken soup or 2 (10 1/2 ounce) cans cream of celery soup
1 (8 ounce) can sliced water chestnuts, drained
1 (3 1/2 ounce) can sliced mushrooms, drained
1 cup chopped celery
3/4 cup mayonnaise
1 small onion, chopped
1/2 cup sliced almonds
1 tablespoon lemon juice
1 teaspoon salt
1 cup crushed corn flakes cereal
chopped fresh parsley, for garnish

Steps:

  • Cook rice according to package directions.
  • Stir together cooked rice and next 10 ingredients in a bowl.
  • Spoon into a lightly greased 13- x 9-inch baking dish.
  • Sprinkle evenly with cereal.
  • Bake at 350?
  • for 30 minutes (I bake it longer) or until golden and bubbly.
  • Garnish, if desired.
  • Note: Freeze casserole up to 1 month, if desired.
  • Thaw casserole in refrigerator overnight.
  • Bake, covered with aluminum foil, at 350?
  • for 45 minutes.
  • Remove foil, and bake 15 minutes more or until thoroughly heated.

Tips:

  • Choose the right chicken. Boneless, skinless chicken breasts or thighs are both good options for this casserole. If you're using chicken breasts, be sure to pound them thin so they cook evenly.
  • Use cooked rice. This will save you time and make the casserole easier to assemble. If you don't have any cooked rice on hand, you can cook it according to the package directions.
  • Don't overcook the chicken. The chicken should be cooked through but still tender and juicy. Overcooked chicken will be dry and tough.
  • Use a creamy soup. Cream of chicken soup or cream of mushroom soup are both good options for this casserole. You can also use a combination of the two.
  • Add some vegetables. Chopped celery, carrots, or onions are all good additions to this casserole. You can also add a can of drained corn or peas.
  • Top the casserole with crushed Rice Krispies. This will give the casserole a crispy topping. You can also use crushed cornflakes or bread crumbs, if desired.

Conclusion:

Chicken casserole with Rice Krispies is a quick and easy meal that's perfect for a busy weeknight. It's also a great way to use up leftover chicken. This casserole is sure to be a hit with your family and friends.
