Steps:

  • Preheat oven to 350°. In a Dutch oven, heat butter over medium-high heat. Add onion and pepper; cook and stir until tender. Stir in flour until blended; gradually stir in broth. 4 burrito-size flour tortillas
1 1/3 cups cooked white rice, warmed

Steps:

  • Heat the oil in a medium pot over medium-high heat. Add 1/2 cup pico de gallo, the chopped chipotle and adobo sauce to taste; cook until the mixture starts to sizzle, about 2 minutes. 2 tablespoons chicken broth
1 onion, finely chopped

  • Place chicken on a cutting board and chop into bite-sized strips. Place in a crockpot on high.

  • Simmer on high for 5 hours.
  • Remove chicken from crockpot and shred with two forks; and place back into crock pot.

  • Fold burrito up 2/3 of the way to the other side over the chicken mixture. Fold sides in towards the center.

1 15-ounce can black beans
1 cup grape tomatoes
1/2 cup fresh cilantro
1/4 cup pickled jalapeno peppers, plus 2 tablespoons pickling liquid
4 8-inch whole-wheat tortillas, warmed
1/2 cup shredded reduced-fat cheddar cheese
1 avocado, sliced
Plain low-fat yogurt or sour cream, for serving (optional)

1 whole chicken
1 (10 ounce) can diced tomatoes with habanero peppers (such as RO*TEL® Hot)
1 green bell pepper, diced
1 large onion, diced
3 jalapeno chile peppers, seeded and diced
2 (1 ounce) packets taco seasoning mix, divided
2 tablespoons canola oil, or as needed
1 (15 ounce) package flour tortillas

Steps:

  • Place chicken, tomatoes with habanero peppers, green bell pepper, onion, jalapeno chile peppers, and 1 packet taco seasoning in a large pot; pour in enough water to just cover chicken.
  • Bring chicken and vegetables to a boil, reduce heat to low, and simmer until chicken is no longer pink inside, about 1 1/2 hours. An instant-read thermometer inserted into the thickest part of the thigh, near the bone, should read 165 degrees F (74 degrees C).
  • Remove chicken from the pot and let cool. Pull chicken meat off the bones and cut into bite-sized pieces; discard carcass. Pour off about half the liquid from the pot, making sure all the vegetables stay. Return chicken meat to pot; add the remaining 1 packet taco seasoning. Simmer until flavors have blended, about 10 minutes.
  • Heat canola oil in a large skillet over medium heat; fry tortillas, working in batches, in the hot oil until desired crispness is reached, 1 to 2 minutes per side. Spoon chicken mixture into each tortilla to serve.

2 tablespoons vegetable oil
1 box Hamburger Helper™ crunchy taco
1 cup water
1 cup milk
2 cups chopped deli rotisserie chicken
2 tablespoons lime juice
2 tablespoons chopped fresh cilantro, if desired
1/2 cup sour cream
1/3 cup milk
10 Old El Paso™ flour tortillas for burritos (8 inch)
1/2 cup fresh salsa

Steps:

  • In 10-inch skillet; heat oil over medium heat until hot. Stir in uncooked rice (from Hamburger Helper box); continue cooking 2 to 3 minutes or until rice starts to brown. Stir in water, 1 cup milk and the sauce mix (from Hamburger Helper box) until blended. Heat to boiling.
  • Reduce heat. Cover and simmer about 20 minutes, stirring frequently, until rice is tender. Stir in chicken, lime juice and cilantro; cover and remove from heat. Let rest 5 minutes.
  • Meanwhile, in small bowl, stir together sour cream, milk and topping mix (from Hamburger Helper box); set aside. Slightly crush corn chips (from Hamburger Helper box); set aside.
  • Heat tortillas as directed on package. Spoon about 1/3 cup chicken mixture down center of each warm tortilla; spoon cheese topping and salsa over filling. Top with crushed corn chips. Fold bottom of each tortilla 1 inch over filling. Fold sides in, overlapping to enclose filling. Fold top over sides.

6 whole wheat tortillas
1 cup shredded Mozzarella cheese
4 boneless skinless chicken breasts (cooked and shredded)
1 cucumber (diced)
1 cup chopped cilantro
1/2 cup diced red onion

Steps:

  • In a bowl, combine plain Greek yogurt and the Fiesta Ranch Seasoning Mix, until well combined.
  • Spread mixture evenly between tortillas.
  • Top with Mozzarella cheese.
  • Divide chicken, cucumber, cilantro and red onion evenly between tortillas.
  • Roll the tortilla up, tucking in the two ends, so the filling doesn't come out.

1 lb boneless skinless chicken breast
chili powder
cumin
oil
1 (16 ounce) can refried beans
1 medium tomatoes
1 small onion
2 jalapenos
2 cups shredded cheddar cheese or 2 cups monterey jack cheese
4 large flour tortillas
Pam cooking spray or butter
salsa, and or guacamole

Steps:

  • Trim breast and pound to 1/4 inch cutlets. Completely coat cutlets in a 50/50 mixture of Chili Powder and Cumin. In a large pre-heated oil-coated skillet, fry cutlets until cooked through over med-high heat. Let cutlets cool for 10-15 minutes then cut into bite-size strips.
  • Heat Refried Beans over low heat while letting chicken cool and cutting vegetables.
  • Dice tomato into bite-size pieces. Mince onion and jalapenos (seeded or not depending on your heat preference).
  • When chicken is able to be handled comfortably and beans are heated through, you can begin assembly. Spread 1/4 of the refried beans on one side of tortilla leaving about a 1/2 to 1 inch of uncoated tortilla around the edges. Fill the center of bean coated tortilla with chicken, tomatoes, onions, jalapenos, and cheese. Roll up the tortilla into the shape of a burrito.
  • In a large skillet (Preferably cast iron, but not necessary) preheated to medium and sprayed with PAM or lightly coated with butter, placed burritos in the pan with the folds face down. Cover and fry for about 5 minutes. Flip and cook for 5 more minutes while covered. Tortilla shell should become nicely toasted.
  • Serve with Salsa and or Guacamole on the side. I also make some Spanish rice to go along with this dish as well. Enjoy!

¼ cup salsa
1 medium jalapeno pepper, diced
1 dried red chile pepper
3 cloves garlic, minced
1 (1 ounce) envelope taco seasoning mix (such as Ortega®)
1 cup uncooked white rice
8 (10 inch) flour tortillas
1 (16 ounce) can refried beans
¼ cup shredded Cheddar cheese, or to taste
¼ cup sour cream, or to taste

Steps:

  • Place chicken in the bottom of a slow cooker and add just enough water to cover, 2 1/2 to 3 cups. Mix in jalapeno, dried chile, garlic, and taco seasoning.
  • Cook on Low until chicken is no longer pink in the center, juices run clear, and it shreds easily with a fork, about 5 hours.
  • Shred chicken and allow to cook in the water mixture on Low, about 20 more minutes. Remove chicken from the pot and set aside in a bowl. Transfer cooking water to a saucepan.
  • Add rice to the cooking water and bring to a boil. Reduce heat to medium-low, cover, and simmer until rice is tender and water has been absorbed, 20 to 25 minutes.
  • Meanwhile, preheat the oven to 250 degrees F (120 degrees C).
  • Wrap tortillas in foil and place in the preheated oven to warm, 5 to 10 minutes.

1 cup chicken broth
1/2 cup salsa, use your favorite
1/3 cup flour
1 onion, chopped fine
1 garlic clove, minced
2 lbs whole chickens, small enough to fit into crock pot
3/4 cup sour cream
1 cup cheddar cheese, shredded
2 cups red beans, canned
8 flour tortillas or 8 corn tortillas

Steps:

  • Add broth, salsa and flour in crock pot, mixing well.
  • Add onion and garlic, stir together.
  • Place whole chicken in crock pot.
  • Cook on low for 6 hours.
  • Remove chicken and shred meat with 2 forks, discard all bones and other unwanted parts.
  • Then run juice thru a blender to make a smooth liquid.
  • Return liquid to crock pot.
  • Add sour cream to juice in crock pot stirring well.

TACO BELL'S GRILLED STUFFED CHICKEN BURRITOS

I've search high and low on the internet. I've dug deep. I've looked in every recipe site I could find. Yet somehow, no one on the internet has posted a recipe for Taco Bell's chicken burritos. You know, the ones with the avocado ranch sauce. The most delicious item on the Taco Bell menu. Somehow, this great oversight has gone unnoticed by anyone but me. No longer. Here is the recipe. (Note: very few of the amounts are exact. I'm estimating. I didn't measure. Usually if you estimate with this blend it will be okay).

3 chicken breasts
1 tablespoon paprika
1 tablespoon cumin
1/2 tablespoon chili powder
1 teaspoon cayenne pepper
2 teaspoons garlic powder
1 teaspoon salt
6 ounces enchilada sauce
2 cups uncooked medium grain rice
4 cups water
1 avocado
1 lime
salt
1/3 cup ranch dressing, depending on the size of your avocado
1 cup grated cheddar cheese, to taste
10 -16 tortillas (varies by size)

Steps:

  • Pound out the chicken breasts until they're thin and flat. Sprinkle most of the spice mixture evenly over the chicken breasts. Make sure they're well-seasoned.
  • Meanwhile, cook the rice in a pot or rice cooker (the latter produces better results). Once it's done, mix it with the remainder of the spices and the enchilada sauce.
  • Grill the chicken; allow to cool and slice.
  • Mash the avocado and mash in the ranch dressing, salt, and lime juice.
  • Warm however many tortillas you wish to make burritos with.
  • To construct a burrito, lay out a tortilla and spoon on some of the avocado sauce. Spread it over the middle of the tortilla. Then spoon on a few tablespoons of the rice, followed by a sprinkling of cheddar cheese. Place the chicken on top of the cheese, add more avocado sauce to taste, and roll up the burrito. (Lime juice and salsa verde are also wonderful on this if you wish.).
  • Microwave the final burrito for about 20 seconds just to make sure everything is warm. Enjoy! They taste incredibly like Taco Bell's.

Tips:

  • To make the chicken flavorful, marinate it in a mixture of chili powder, cumin, garlic powder, oregano, salt, and pepper for at least 30 minutes before cooking.
  • Use a large skillet or griddle to cook the chicken so that it has plenty of room to brown.
  • Cook the chicken over medium-high heat so that it browns quickly and evenly.
  • Once the chicken is cooked, shred it with two forks.
