1-1/2 pounds boneless skinless chicken breasts, cubed
2 cups frozen broccoli florets, thawed
1 cup julienned carrots
1/2 cup chopped onion
1 tablespoon olive oil
1 can (10-3/4 ounces) condensed cream of broccoli soup, undiluted
1 cup stuffing mix
1 cup whole milk
1/4 cup raisins
1/8 teaspoon pepper
1 cup shredded Colby cheese

Steps:

  • In a large skillet, saute the chicken, broccoli, carrots and onion in oil for 5-6 minutes or until chicken is no longer pink., Stir in the soup, stuffing mix, milk, raisins and pepper. Cook, uncovered, over medium heat for 8-10 minutes or until heated through. Sprinkle with cheese. Remove from the heat; cover and let stand until cheese is melted. Freeze option: Before adding cheese, cool casserole; cover and freeze. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before reheating. Preheat oven to 350°. Cover casserole with foil; bake 20-30 minutes or until heated through and a thermometer inserted in center reads 165°. Sprinkle with cheese.

2 cups frozen baby broccoli florets, thawed and drained
1 (10.5 ounce) can condensed cream of mushroom soup (NOT diluted)
1 (10.5 ounce) can cream of chicken soup (NOT diluted)
1 cup milk
1 (12 ounce) package Pepperidge Farm stuffing mix (or two 6-ounce boxes of Stove Top stuffing mix), plus additional ingredients called for on the package*
Optional garnish: chopped fresh parsley or thyme

Steps:

  • Preheat oven to 350°F (180°C).
  • Grease a 9x13-inch baking dish; set aside.
  • In a large bowl, whisk together condensed soups and milk. Stir in cooked chicken and thawed baby broccoli florets.
  • Transfer chicken mixture to the prepared baking dish.

This is a recipe I got from a neighbor lady in Terre Haute, IN, when I was about 15 years old. I just love to cook and I love this casserole!!! Its Simple and Easy to make!

2 lbs chicken breasts
2 (10 ounce) cream of chicken soup
14 ounces frozen chopped broccoli
2 (6 ounce) boxes chicken flavor stuffing mix
2 cups shredded cheddar cheese
2 cups water

Steps:

  • Bake Chicken Breast in a 9x13 baking dish at 350* for approximately 35 minutes. Drain fluids from baking pan, cube the chicken into 1 inch squares.
  • Next Combine the soup, Broccoli and Stuffing mix with a cup of water in a bowl until mixed thoroughly.
  • Place cubed chicken into the bottom of the 9x13, smooth stuffing mixture over the chicken, and cover with the shredded cheddar.
