2 chicken breasts, cut into 1 inch (2cm) pieces
salt, to taste
pepper, to taste
½ cup yellow onion, about half an onion, diced
2 cloves garlic, about 1 tablespoon, minced
2 cups chicken broth
3 cups water
16 oz pasta shells
4 cups broccoli, or one head of broccoli
½ teaspoon cayenne powder
¼ teaspoon nutmeg
1 cup milk
2 cups shredded cheddar cheese

Steps:

  • Heat olive oil on medium heat in a large pot. Add chicken breasts, season with salt and pepper, and allow the chicken to brown on one side.
  • Flip chicken, then add onions and garlic as the second side browns.
  • Once the chicken has browned on both sides, add chicken broth, water, and pasta to the pot.
  • Stir all ingredients, cover the pot with a lid, and bring to a boil. When it begins to boil, uncover and stir. Bring the heat to low, stir, then cover and let simmer for 20 minutes.
  • After 20 minutes has passed, uncover and add in the broccoli. Stir continually as the broccoli steams until the rest of the liquid evaporates.
  • Add milk and cheddar cheese and stir until the cheese melts and you have a smooth cheese sauce.
  • Add salt and pepper (to taste), cayenne, and nutmeg. Stir once more, then you're ready to serve.

1 teaspoon bottled garlic (minced)
1 teaspoon onion powder
1/2 teaspoon sea salt

2 tablespoons extra virgin olive oil
8 ounces frozen broccoli florets
8 ounces heavy whipping cream
3 tablespoons margarine
1/2 teaspoon sea salt
fresh ground black pepper
1/2 cup parmesan cheese (good quality shredded cheese)
1 egg (Separated)
1 teaspoon bottled garlic (minced)
8 ounces angel hair pasta

Steps:

  • Defrost baby broccoli florets.
  • Cut chicken tenders into bite sized pieces about 1/2 - 1 inch long.
  • Heat extra virgin olive oil in large skillet.
  • Add minced garlic, onion powder, 1/2 tsp sea salt, 4 grinds fresh ground black pepper and chicken pieces.
  • Cook chicken until no longer pink stirring and turning chicken constantly. About 10 - 15 minutes depending on how big you cut the chicken.
  • Once chicken is done add baby broccoli florets and heat through.
  • Remove chicken and broccoli from pan and place in large glass bowl and cover with foil to keep warm.
  • Boil salted water in large sauce pan and make Angel Hair pasta to box specifications.
  • Rinse pasta in cold water (so it doesn't stick together while making sauce) then drain well. Cover sauce pan and sit aside while making sauce.
  • Making Alfredo sauce.
  • Separate egg putting yolk in small dish.
  • Add heavy whipping cream stirring constantly making sure it doesn't scorch.
  • Stir in 1/2 tsp sea salt, 1 tsp minced garlic and 4 grinds fresh ground black pepper and 1/2 c shredded Parmesan cheese (use quality cheese).
  • Stir constantly until cheese is melted between 10-15 minutes.
  • Temper egg yolk by adding small amount of hot liquid cheese/cream mixture in dish with the egg yolk stirring constantly until well incorporated.
  • Slowly add yolk mixture into sauce pan containing the cheese/cream mixture stirring constantly.
  • Simmer over medium low heat for 3-5 minutes until it reaches desired consistency. Don't worry it will thicken up quickly while simmering.
  • Add chicken and broccoli and mix well until heated through.
  • Place equal amounts of pasta in 2 bowls and top each with Alfredo Chicken and Broccoli sauce.

4 tablespoons unsalted butter
2 cloves garlic, minced

5 cups whole milk
2 cups grated Gruyere
1 cup sour cream
2/3 cup grated Parmigiano-Reggiano
2 teaspoons hot sauce
12 ounces cooked chicken breast or deli chicken, cut into 1/2-inch dice
1/2 cup chopped crispy-cooked bacon
1/4 cup chopped fresh chives

Steps:

  • Bring a large pot of water to a boil. Season with salt until it tastes like the sea. Cook the pasta until not quite al dente, about 7 minutes. Transfer with a spaghetti scoop or slotted spoon to a bowl and set aside. Add the broccoli to the pasta water and blanch briefly. Transfer with a slotted spoon to a bowl. Reserve the pasta water.
  • While the pasta is cooking, heat the butter in a large pan over medium heat. Once the butter is melted, add the garlic and cook until fragrant, about 30 seconds. Whisk in the flour and cook for 2 minutes. Whisk in the milk, then bring to a boil. Reduce the heat to a simmer and cook, whisking, until the sauce is slightly thickened, about 5 minutes. 2 Garlic Cloves, Minced

(Kraft recommends using 6 oz of their grilled chicken strips but I prefer fresh chicken over packaged - use what you are most comfortable serving). ***Update*** Based on the review I wanted to let you know what I took out of the original recipe - it called for 1/2 c sliced olives. I was thinking if you want a really strong flavor - try a very Zesty Italian Dressing or saute your chicken with garlic and add chopped onions to the final dish. 1 1/2 cups spiral shaped pasta
1 head broccoli, cut into florets
1 small onion, finely chopped
2 cups shredded cooked chicken
1 cup reduced-fat sour cream
1/2 cup skim milk
1 (60 g) packet lite cream of chicken soup mix
1/2 cup low-fat tasty cheese, grated
salt and pepper

Steps:

  • Preheat oven to 180 degrees C.
  • Lightly spray olive oil over baking dish.
  • Place pasta in a pot of boiling water and cook as per packet instructions.
  • Drain well.
  • Combine pasta, broccoli, onion and chicken and place in the baking dish.
  • Mix together sour cream, milk, soup mix and salt and pepper if desired and pour over the pasta.
  • Sprinkle cheese over top and bake for about 25 minutes or until golden in colour.

¾ cup broccoli florets
¾ cup shredded cooked chicken
¾ cup sweet corn, drained
8 cherry tomatoes, halved, or more to taste

1 ½ tablespoons liquid honey
1 ½ tablespoons soy sauce
1 ½ tablespoons lemon juice
ground black pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook fusilli in the boiling water, stirring occasionally, until tender yet firm to the bite, about 12 minutes. Drain and rinse under cold water. Transfer pasta to a large bowl.
  • Meanwhile, fit a deep saucepan with a steamer insert. Add 2 inches of water and heat to boiling. Place broccoli in the steamer, cover, and cook until just tender, about 4 minutes. Add to the bowl with the cooked pasta.
  • Add chicken, corn, tomatoes, and green onions to the bowl with the pasta.
  • Whisk olive oil, honey, soy sauce, lemon juice, and black pepper together in a bowl. Pour dressing over pasta salad and toss to coat.

This is an easy, budget-friendly Italian dish that I found in the paper. Since I usually have most of these ingredients on hand, I hope to try it soon. Until then, I'm putting it here for safe keeping.

1 lb rigatoni pasta
1 tablespoon olive oil
1 lb boneless skinless chicken thighs, cut into 1-inch pieces
1 cup diced onion
1 tablespoon chopped garlic
1 teaspoon dried basil
1 teaspoon dried oregano
1 tablespoon kosher salt
1 teaspoon sugar
1 cup red wine
1 (28 ounce) can diced tomatoes
1/2 lb broccoli, chopped into 1/2-inch pieces
1 cup grated parmigiano-reggiano cheese

Steps:

  • Boil pasta in 6 quarts of water for 8 to 10 minutes. (The pasta will be slightly undercooked). Drain, and set aside. Do NOT rinse.
  • Heat the oil on medium high in a pot large enough to hold the 1 pound of cooked pasta, then add the chicken pieces. Cook for 2 minutes, turning the chicken to brown evenly on all sides.
  • Add the diced onion, and cook for 2 more minutes. Stir in the chopped garlic, basil and oregano and cook for 1 minute. Season with salt and sugar, then pour in the red wine. Bring to a simmer, and reduce the liquid by half.
  • Toss in the diced tomatoes, and return to a simmer. Cook for an additional 5-7 minutes, or until the chicken is thoroughly cooked. Add the chopped broccoli, and continue cooking for 2 minutes.
  • Mix in the pasta, and cook until the pasta reaches your preferred doness. Finish by mixing in the parmeasan cheese and taste for salt.

1 pound penne pasta
¼ cup olive oil
1 large skinless, boneless chicken breast half - cut into cubes
2 tablespoons lemon juice
2 tablespoons capers
1 bunch asparagus, trimmed and cut into 1 inch pieces
2 cups broccoli florets
1 (3 ounce) can sliced mushrooms, drained
¼ cup water

Steps:

  • Fill a large pot with lightly salted water, and bring to a rolling boil over high heat. Cook pasta in boiling water until the pasta has cooked through, but is still firm to the bite, about 11 minutes. Drain well.
  • Meanwhile, heat the olive oil in a large skillet over medium-high heat. Add the chicken breast, and cook until browned on all sides, 3 to 5 minutes. Stir in lemon juice and capers, and continue cooking until chicken is no longer pink in the center, about 5 minutes longer. Remove chicken from pan.
  • Using the same pan, add asparagus, broccoli, mushrooms, and water to the juices remaining in the pan. Cover, and simmer until the broccoli and asparagus are tender. Layer pasta, chicken, and vegetables in a large platter or bowl to serve.

1 bag Chicken Breast (Perdue Shortcuts, Italian Seasoned)
1 bunch Broccoli
1 package Baby Bella Mushrooms
4 teaspoons Butter
3 teaspoon Minced Garlic
2 tablespoons Flour
2 cups Skim Milk
1 package Bow Tie Pasta
1 cup Parmesan Cheese
2 dashes Salt & Pepper to taste

Steps:

  • Start water boiling in 2 pots for pasta and broccoli
  • Add 2 tsp. of butter & 1 tsp. garlic to hot skillet. Add sliced mushrooms. Sautee and set to side.
  • Add 2 tsp butter to hot skillet. Whisk in 2 Tbls of flour to make a roux. Gradually stir in 2 cups of milk. Heat to a boil stirring frequently. Reduce heat to thicken and add parmesan cheese and stir to thicken. Season with 2 tsp of garlic and add salt & pepper to taste.
  • Add broccoli to boiling water for 3-5 mins
  • Add pasta to boiling water for 7-9 mins
  • Once done, drain pasta and broccoli and add to sauce in pan
  • Add mushrooms to pan
  • Add heated chicken to pan
  • Stir all together and serve
