This is my own creation of a recipe from a local restaurant that closed. This was my favorite along with their Robert Redford Pie. That's a recreation waiting to happen too! You may choose to used canned chicken to have even less prep or make triangles,instead of squares, for appetizers. Great with a salad to complete a light meal.

Number Of Ingredients 8

4 ounces softened cream cheese
3 tablespoons melted butter
2 cups cooked cubed boneless chicken
1/2 teaspoon salt and pepper, to taste
2 tablespoons milk
1 tablespoon chopped onion
1 (8 ounce) can refrigerated crescent dinner rolls
2 cups lightly steamed chopped broccoli

Steps:

  • Blend cream cheese with butter.
  • Add chicken, salt, pepper, milk, and onion.
  • Spoon 1/2 cup meat mixture onto 2 unseparated "triangles" of dough - this should be a square.
  • Sprinkle top liberally with cooked broccoli.
  • Pull 4 corners to the top center of the mixture and twist slightly to seal edges by pinching.
  • Brush tops with remaining butter.
  • Bake on ungreased cookie sheet for 20-25 minutes in 350 degrees oven until golden brown.

We can do this two ways. You can dollop each individual crescent and roll them up the traditional way. Or you can leave two crescents together, pinch the seams at the perforation, making a rectangle and pile double the amount in. Then just gently pull the corners up and pinch it perfect.

Number Of Ingredients 12

1 tablespoon extra-virgin olive oil, plus more if needed for the broccoli
2 boneless skinless chicken breasts
Kosher salt and freshly ground black pepper
2 small broccoli crowns, trimmed and cut into florets
4 ounces grated mozzarella cheese (see Cook's Note)
2 tablespoons mayonnaise
1 teaspoon garlic powder
1 teaspoon Italian seasoning
Two 12-ounce tubes refrigerated rolled crescent dough
1 large egg, lightly beaten
2 tablespoons finely grated Parmesan cheese
1 cup ranch dressing or marinara sauce, for dipping

Steps:

  • Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment paper.
  • Heat the oil in a medium nonstick skillet over medium-high heat. Sprinkle the chicken with some salt and pepper and sear on one side for 5 minutes. Flip and sear for 5 minutes more. Transfer the chicken to a plate to let cool for 5 minutes, then give it a good chop.
  • Meanwhile, add the broccoli to a food processor and pulse until finely minced. While the chicken is resting, add the broccoli to the skillet with a pinch of salt and saute until the broccoli slightly wilts and pops in color, 3 to 5 minutes, adding a little oil if needed.
  • Combine the chicken, broccoli, mozzarella, mayonnaise, garlic powder, Italian seasoning and a pinch of salt in a large bowl until fully incorporated.
  • Roll the crescents out two ways: You can unfold each individual triangle and dollop about 1 tablespoon of the chicken mixture at the thicker end, rolling it up to make sure the tip is on top. Or you can unroll two crescents together to make a rectangle, pinch them together at the perforation, dollop about 1/2 cup of the chicken mixture in the center and gently pull the corners together on top, pinching to seal.
  • Place the crescent rolls on the prepared baking sheet and brush with the beaten egg. Sprinkle each with the Parmesan and bake until golden brown on top, 14 to 20 minutes depending on their size. Serve with any dipping sauces you prefer.

1/4 cup chopped olive (optional)
1 (8 ounce) can refrigerated crescent dinner rolls
3/4 cup crushed crouton

Steps:

  • Blend cream cheese with 2 Tbsp butter until smooth.
  • Add next five ingredients and mix well.
  • Spoon 1/2 C meat mixture onto 2"triangles" of dough.
  • (don't separate, so you actually have a "square") Pull 4 corners to the top, center of mixture and twist slightly and seal edges by pinching.
  • Brush tops with remaining butter and sprinkle with croutons Bake on ungreased cookie sheet for 20-25 minutes in a 350* oven until golden brown.

These are so yummy, and easy to make too, a favorite in my house for a long time, they make a great snack or a main meal, served with a side salad. If desired the recipe may be doubled without any problem, it's a good idea to prepare a double batch of these, cause they won't last long!

1/2 cup uncooked instant rice (Minute Rice is good)
1/2 cup water
1 (10 ounce) package frozen cut broccoli in cheese sauce, thawed (I use Green Giant brand)
1/4 cup grated parmesan cheese (or to taste)
salt and black pepper
1 (8 ounce) can refrigerated crescent dinner rolls (Pillsbury is good)
1 -2 tablespoon melted butter or 1 -2 tablespoon margarine
2 tablespoons grated parmesan cheese

Steps:

  • Heat oven to 350 degrees.
  • Lightly grease a cookie sheet.
  • Cook the rice in 1/2 cup water as directed on the package.
  • In a medium bowl, combine the cooked rice, broccoli in cheese sauce, 1/4 cup grated Parmesan cheese, salt, pepper and pepper; mix well.
  • Separate the dough into 4 rectangles.
  • Firmly press perforations to seal.
  • Press each to form a 6x3-inch rectangle.
  • Mound generous 1/3 cup of broccoli mixture evenly onto one end of each dough rectangle.
  • Fold and strech dough over the filling; press the edges to seal well (squares will be very full).
  • With a fork, crimp the edges.
  • Place on a cookie sheet.
  • Brush with melted butter, sprinkle with 2 Tbsp of Parmesan cheese.
  • Bake for 19-24 minutes, or until golden brown.
  • ***NOTE***to quickly thaw frozen broccoli package, cut small slit in the center pouch; microwave on HIGH for 2-3 minutes, or until thawed.

2 cups cooked chicken, cubed
salt and pepper, to taste
2 tablespoons milk

8 ounces Pillsbury Refrigerated Crescent Dinner Rolls
3/4 cup seasoned bread crumbs

Steps:

  • Preheat oven to 350 degrees.
  • Blend butter with cream cheese Add milk and onion. Stir in chicken. Add salt and pepper.
  • Separate dinner rolls into four rectangles, pressing perforations to seal. Spoon 1/2 cup mixture into center of each rectangle. Fold over two opposite sides to meet in the middle forming a square. Press the other two edges together to seal.
  • Brush top with melted butter and dip into bread crumbs. Place on non stick cookie sheet crumb side up.
  • Bake at 350 degrees for 20-25 minutes until browned.

3 ounces cream cheese, softened
3 tablespoons butter, melted, divided
1/4 teaspoon salt
1/8 teaspoon pepper
2 cups cubed cooked chicken
2 tablespoons milk
1 tablespoon chopped onion
1 tablespoon diced pimientos
1 tube (8 ounces) refrigerated crescent rolls
1/4 cup seasoned bread crumbs

Steps:

  • In a bowl, beat cream cheese, 2 tablespoons butter, salt and pepper until smooth. Stir in chicken, milk, onion and pimientos. Unroll crescent roll dough and separate into four rectangles; place on an ungreased baking sheet an press perforations together. , Spoon 1/2 cup chicken mixture into the center of each rectangle. Bring edges up to the center and pinch to seal. Brush with remaining butter; sprinkle with crumbs. , Bake at 350° for 20-25 minutes or until golden.
