Fix Trisha Yearwood's cheesy Chicken Broccoli Casserole recipe, from Trisha's Southern Kitchen on Food Network, as a comforting make-ahead meal.

Provided by Trisha Yearwood

Categories     main-dish

Time 2h50m

Yield 10 servings

Number Of Ingredients 10

Nonstick cooking spray or butter, for the baking dish
4 boneless, skinless chicken breasts
Kosher salt and freshly ground black pepper
1 medium head broccoli, cut into small florets
2 cups cooked white rice
One 10-ounce can condensed cream of chicken soup
1 cup sour cream
1/2 cup mayonnaise
1 tablespoon lemon juice
10 ounces Cheddar, grated (about 2 1/2 cups)

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9-by-13-by-2-inch baking dish with nonstick cooking spray or butter.
  • Place the chicken in a large pot with water to cover. Add some salt, bring to a boil, then reduce the heat to a low simmer and cook the chicken until tender, about 45 minutes. Drain the chicken, cover, and refrigerate until cool, or up to 24 hours. Shred.
  • Meanwhile, bring a medium pot of generously salted water to a boil. Add the broccoli florets, and boil until crisp-tender, 2 to 3 minutes.
  • Spread the rice in an even layer in the baking dish. Make a second layer with the broccoli. In a large bowl, mix the chicken soup, the sour cream, mayonnaise, lemon juice, shredded chicken, half the Cheddar and some salt and pepper. Pour the mixture over the broccoli and top with the remaining Cheddar. Bake for 40 minutes; let stand for 5 minutes before serving.

Tips:

  • Choose the right chicken. Boneless, skinless chicken breasts or thighs are both good choices for this casserole. If you're using chicken breasts, be sure to slice them into thin strips so that they cook evenly.
  • Use fresh broccoli. Fresh broccoli florets will give your casserole the best flavor and texture. If you're using frozen broccoli, be sure to thaw it completely before adding it to the casserole.
  • Don't overcook the chicken or broccoli. The chicken should be cooked through but still juicy, and the broccoli should be tender but still have a slight crunch.
  • Use a good quality cheese. A sharp cheddar cheese or a combination of cheddar and mozzarella will give your casserole a rich, cheesy flavor.
  • Season the casserole well. Salt, pepper, garlic powder, and onion powder are all good choices for seasoning the casserole. You can also add a pinch of cayenne pepper for a little bit of heat.
  • Serve the casserole hot. Chicken broccoli casserole is best served hot out of the oven. You can garnish it with fresh parsley or chives before serving.

Conclusion:

Chicken broccoli casserole is a classic comfort food dish that's easy to make and loved by people of all ages. It's a great way to use up leftover chicken, and it's also a budget-friendly meal. With its creamy sauce, tender chicken, and crispy broccoli, chicken broccoli casserole is sure to be a hit at your next potluck or family gathering.
