1 cup orange juice
1/2 cup cider vinegar
1/2 cup brown sugar (packed)
1/4 cup honey
2 Tablespoons chili powder
1 Tablespoon ground coriander

2 pounds chicken thighs
1 tablespoon olive oil
salt and pepper

Steps:

  • In a small saucepan, combine orange juice, cider vinegar, brown sugar, honey, chili powder, coriander, and cumin. Bring to a boil, reduce heat and let simmer for 35-45 minutes or until sauce has reduced to one cup.

2 half chicken breasts (bone-in and skin on (or chicken thighs))
3 tablespoons butter (melted)
1/2 teaspoon smoked paprika
1/2 teaspoon chili powder
1/2 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon fresh rosemary (chopped fine)
1 teaspoon fresh thyme leaves
salt and black pepper to taste
3/4 cup honey
zest of one orange
1/2 cup fresh orange juice
1/4 cup apple cider
1 tablespoon Dijon mustard
salt and black pepper to taste

Steps:

  • Mix all ingredients for the orange honey glaze in a small bowl. Reserve half in a small bowl to serve with the chicken. Use the rest to baste while the chicken cooks.
  • Preheat the oven to 375 degrees F.
  • Line a half sheet pan with aluminum foil. Place the chicken breasts with the bone-side down on the half sheet pan. 4 boneless skin-on chicken breasts
2 tablespoons canola oil
Kosher salt and freshly ground black pepper
1 large navel orange, zested and juiced (1/2 cup)

2 tablespoons fresh oregano, chopped
2 tablespoons sherry vinegar

1 pound asparagus, trimmed

  • For the orange citrus glaze: Whisk together the orange juice, orange zest, honey, oregano, sherry vinegar, 2 large pinches of salt and a pinch of pepper. Slowly incorporate the canola oil to create an emulsion. Yield: about 1 cup
  • For the chicken: Preheat the oven to 400 degrees F. Line a baking sheet with foil and set a rack over the sheet.
  • Pat the chicken dry with a paper towel. Coat the chicken with the canola oil and generously sprinkle with salt and pepper.   • For the asparagus: Whisk together the orange juice, orange zest, honey, oregano, sherry vinegar, 2 large pinches of salt and a pinch of pepper. Slowly incorporate the canola oil to create an emulsion. Yield: about 1 cup
  • For the asparagus: Place a rimmed baking sheet in the oven and preheat the oven to 400 degrees F.
  • Toss the asparagus with the olive oil in a large bowl and sprinkle with salt and pepper. Add the asparagus to the hot baking sheet and cook until tender, about 10 minutes.
