1 1/2 teaspoons Spanish pimenton or paprika
2 large egg whites
4 boneless, skinless chicken breasts (about 6 ounces each)

4 tablespoons extra-virgin olive oil
1 tablespoon sherry vinegar
5 cups mesclun salad greens

2 boneless skinless chicken breasts
3 tablespoons horseradish cream
3 tablespoons Dijon mustard
1/2 lemon, juice of
salt
pepper
chives (optional or to taste)
fresh thyme (optional or to taste)

  • Pound chicken breasts until they are about 1/4 of an inch thin.
