This wonderful recipe appeared in the Indianapolis Star a few weeks ago and it sounds so scrumptious I know I will be making it often!

4 bonless skinless chicken breast halves
1/2 c all purpose flour
1/2 tsp salt and pepper to taste
4 canned cling peach halves, packed in natural juice, drained, juice reserved
2 Tbsp brown sugar
2 Tbsp marsala wine
1 tsp dried leaf basil
1/4 tsp ground allspice

Steps:

  • 1. Rinse the chicken and pat dry. On a large plate, combine flour, salt and pepper. Dredge the chicken in the flour mixture; set aside.
  • 2. Heat a large nonstick skillet over medium-high heat; spray lightly with vegetable spray. Add the chicken and cook quickly until browned on both sides. Place in a medium-size baking dish. Arrange the peach halves around the chicken; set the baking dish aside.
  • 3. Add enough water to the reserved peach juice to make 1 cup; pour into a small bowl. Stir in the brown sugar, wine, basil and allspice. Pour over the chicken; cover with a lid or with foil.
  • 4. Bake in a preheated 350-degree oven for 45 minutes or until internal temperature is 165 degrees. Serve chicken with peaches and juices.
  • 5. NOTE: Alternatives to the marsala wine are: 2 Tbs. grape juice 2 Tbs. sherry vinegar 2 Tbs. other type of wine

1 broiler/fryer chicken (3 pounds), cut up
1/8 teaspoon salt
1/8 teaspoon pepper
1 can (29 ounces) sliced peaches
1/2 cup chicken broth
2 tablespoons butter, melted
1 tablespoon dried minced onion
2 teaspoons curry powder
2 garlic cloves, minced
1/4 teaspoon ground ginger
3 tablespoons cornstarch
3 tablespoons cold water
1/4 cup raisins
Toasted sweetened shredded coconut, optional

Steps:

  • Place chicken in a 5-qt. slow cooker; sprinkle with salt and pepper. Drain peaches, reserving 1/2 cup juice; set peaches aside. In a small bowl, combine broth, butter, onion, curry, garlic, ginger and reserved juice; pour over chicken. 1 tablespoon ground cumin
½ teaspoon ground cardamom
½ teaspoon ground coriander
1 teaspoon ground ginger
1 teaspoon salt

8 bone-in chicken breast halves, with skin
½ cup balsamic vinegar
¼ cup peach preserves
½ cup reduced-sodium chicken broth
½ cup orange juice
3 cups peeled, sliced peaches

  • Preheat oven to 450 degrees F (230 degrees C). Grease rimmed baking sheet with non-stick cooking spray.

2 whole chicken breasts with skin and bones (about 2 pounds total), halved
1 tablespoon olive oil
3 firm-ripe peaches, quartered
3 medium onions, quartered lengthwise
6 jalapeño chilies, quartered lengthwise and seeded (wear rubber gloves)
6 large garlic cloves
1 lemon, quartered
Accompaniment: basmati rice

Steps:

  • Preheat oven to 450° F.
