1 ½ pounds boneless skinless chicken breasts (about four 6-oz chicken breasts)
½ teaspoon each paprika & garlic powder
1 tablespoon olive oil
1 tablespoon salted butter
3 tablespoons white onion (minced)
6 ounces brown or white mushrooms (thinly sliced)
1 clove garlic (minced)
¼ teaspoon thyme
3 tablespoons spreadable herb & garlic cream cheese
2 ounces mozzarella cheese (shredded)
salt & pepper to taste

Steps:

  • Preheat oven to 400°F.
  • Place butter in a pan over medium heat. Add onion and garlic and cook until slightly softened.
  • Add in mushrooms and cook until juices are released and reabsorbed. Add wine and thyme. Cook until evaporated but not dry. Cool completely.
  • Combine cooled mushrooms with cream cheese, mozzarella cheese, and salt & pepper to taste.
  • Using a sharp knife, cut a 1 ½″ slit in the side of the chicken. Move the knife around creating a pocket. Fill the pocket with ¼ of the mushroom mixture. Repeat with remaining chicken breasts.
  • Sprinkle the chicken with paprika, garlic powder, and salt & pepper to taste.
  • Heat 1 tablespoon of oil in an oven-proof skillet. Brown the chicken for about 3 minutes on each side until golden.
  • Place the skillet in the oven and bake for an additional 20-25 minutes or until the chicken reaches 165°F in the thickest part.

5-6 chicken breasts, boneless and skinless
1 c egg substitute (like egg beaters)
1 c instant potato flakes, dry
1/4-1/2 c grated parmesan cheese
2 Tbsp mrs dash tomato basil garlic seasoning
2 Tbsp dried parsley flakes
1-2 tsp mccormick's garlic bread sprinkle
2-4 oz fresh sliced mushrooms
1 Tbsp butter
3-4 slice smoked provolone cheese

Steps:

  • 1. Preheat oven to 375 degrees F. Line a jelly roll pan (or a cookie sheet with a lip) with foil and spray generously with nonstick spray.
  • 2. Saute mushrooms in butter until cooked through. Set aside to cool slightly.
  • 3. Rinse chicken breasts with water and pat dry with paper towels. In a shallow bowl combine potato flakes, parmesan cheese, Mrs Dash, parsley flakes, and the garlic bread sprinkles; mix well. Pour egg substitute into a separate shallow dish; set aside.
  • 4. Slice a pocket into each chicken breast but don't cut all the way through. Stuff with a half slice of provolone and a spoonful of the sauteed mushrooms. Dip whole breast into egg substitute coating all sides; then roll in potato flakes mixture covering thickly. place on prepared pan. Repeat with other pieces of chicken.
  • 5. Bake for about 50-60 minutes or until cooked through. Serve immediately.

3 tablespoons unsalted butter
4 chicken breast halves with skin and bones (2 1/2 to 3 lb total)

Steps:

  • Put oven rack in middle position and preheat oven to 500°F. Line a shallow baking pan with foil.
  • Coarsely grate cheese and set aside in a medium bowl. Pulse mushrooms and shallot in a food processor with thyme, 3/4 teaspoon salt, and 1/4 teaspoon pepper until finely chopped.
  • Heat 2 tablespoons butter in a 10-inch heavy skillet over moderately high heat until foam subsides, then sauté mushroom mixture, stirring occasionally, until lightly browned, about 5 minutes. Stir into cheese (some cheese will melt).

4 chicken breasts, cut in half through the breast to make 8 flat cutlets
1 egg
flour (for dredging)
seasoned Italian breadcrumbs (for dredging)
2 cloves garlic, minced
3 tablespoons olive oil
1 lb mushroom, trimmed,sliced
1 jar barilla tomato sauce with basil (or any good brand)
1/2 cup heavy cream
2 cups provolone cheese, grated
1/2 cup parmesan cheese, grated

Steps:

  • Dredge chicken cutlets first in flour, then dip in egg, and finally dredge in breadcrumbs.
  • Put on a baking pan and refrigerate for 15 minutes while you proceed with recipe.
  • In a non-stick saucepan, heat 1 tblsp of oil over high heat and add mushrooms and garlic.
  • Cook, stirring, until all the liquid the mushrooms have given off has evaporated.
  • Remove mushrooms from pan and set aside.
  • Preheat oven to 350F.
  • In same saucepan, heat remaining 2 tblsps of oil over medium-high heat and fry chicken cutlets until golden-brown, about 3 minutes per side.
  • Remove from pan and transfer to a glass baking dish, overlapping cutlets slightly to fit into the dish.
  • Lightly season cutlets with salt and pepper.
  • Distribute mushrooms over chicken and spoon tomato sauce over.
  • Drizzle with 1/2 cup heavy cream.
  • Cover with the cheeses and bake for 15 minutes, or until heated through and the cheeses have melted.
  • Note: If you haven't got seasoned breadcrumbs, use regular breadcrumbs to which you've added 3/4 tsp each of dried, crumbled oregano and basil.

1 tablespoon garlic powder
1 tablespoon onion powder
1 ½ teaspoons ground paprika
3 tablespoons olive oil, divided
2 medium onions, chopped
6 cloves garlic, minced
1 ½ (8 ounce) cans sliced mushrooms, drained and chopped
salt to taste
2 tablespoons dry white wine
½ teaspoon dried parsley, or to taste
ground black pepper to taste
2 tablespoons dry bread crumbs, or as needed
5 (5 ounce) skinless, boneless chicken breast halves
1 (10.5 ounce) can condensed cream of mushroom soup

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a baking tray with foil. Mix garlic powder, onion powder, and paprika together in a small bowl.
  • Heat 1 tablespoon oil in a skillet over medium-high heat. Add onions and garlic and saute for 1 minute.
  • Set aside 1/3 of the mushrooms for garnish; add remaining mushrooms to the skillet and season with salt. Saute until soft, 2 to 3 minutes. Add wine and cook for 1 to 2 minutes, scraping any browned bits of food off the bottom of the pan with a spoon. Add parsley and pepper, then mix in just enough bread crumbs to bind. Remove from the heat.

  • Heat remaining 2 tablespoons oil in a large skillet over medium heat. Place chicken breasts, seasoned-sides down, in the hot skillet and let them brown for about 2 minutes. Season the tops with the remaining spice mixture, flip, and brown for 2 more minutes. Transfer to the prepared baking tray.
  • Spoon reserved mushrooms over the chicken breasts, then pour condensed soup over top.
  • Bake in the preheated oven until no longer pink in the center and the juices run clear, about 20 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
