1 (16 ounce) package Farfalle pasta
2 cups broccoli florets
3 boneless skinless chicken breasts (cooked and cubed)
1 cup cherry tomatoes (halved)
1 green bell pepper (diced)
4 ounces Colby Jack cheese (cubed)
1 (2.25 ounce) can sliced olives (drained)
1 (16 ounce) bottle Italian dressing
1 cup grated Parmesan cheese

Steps:

  • Cook pasta as directed on package, adding broccoli to the cooking water for the last 2 minutes; drain.

(Kraft recommends using 6 oz of their grilled chicken strips but I prefer fresh chicken over packaged - use what you are most comfortable serving). ***Update*** Based on the review I wanted to let you know what I took out of the original recipe - it called for 1/2 c sliced olives. I was thinking if you want a really strong flavor - try a very Zesty Italian Dressing or saute your chicken with garlic and add chopped onions to the final dish. Maybe that would perk it up for those that like things a bit spicier. The original way is a method in which my kids will eat it but I understand how adults may want a bit more zing.***

Steps:

3 lbs chicken
6 peppercorns
1 bay leaf
1 stalk parsley
1 sprig fresh thyme
1 onion
1 carrot
1 stalk celery
1/2 green pepper, finely shred
1/2 red pepper, finely shred
1/2 yellow pepper, finely shred
8 ounces bow tie pasta, cooked
salt
pepper
1/2 small onion, finely diced
2 teaspoons vegetable oil
1 tablespoon curry powder
1/2 cup white wine
2 tablespoons water
1 1/2 cups mayonnaise
2 tablespoons water
pepper
salt

Steps:

  • Poach chicken by placing in a large pot with enough cold water to barely cover.
  • Add peppercorns, bay leaf, parsley, thyme and one each: onion, carrot and celery cut into quarters.
  • Bring to a bare boil with lid on; reduce heat to low and simmer for 50 minutes.
  • Cool in poaching liquid, then drain, skin and shred.
  • To make curry flavouring, soften diced onion in hot oil, then add curry powder and cook over medium-high heat for a further 3 minutes.
  • Add wine and water.
  • Boil rapidly until reduced to about 3 tablespoons.
  • Strain and let cool.
  • Prepare curry mayonnaise by combining all ingredients until smooth.
  • Place peppers in a large bowl (reserving a little for garnish), with chicken, pasta, salt, pepper and curry mayonnaise.
  • Mix gently until well- coated.
  • If mayonnaise mixture is too thick, add warm water gradually until a smooth consistency is attained.
  • Place a portion of salad on bed of spinach and sprinkle reserved peppers on top.
  • Assemble just before serving, as the mayonnaise quickly loses its fresh look.

1/3 cup fresh orange juice
1/4 cup fresh lemon juice
