Time 1h

Number Of Ingredients 11

4 cups shredded chicken (from 2 large chicken breasts, (16 oz by weight))
2 large eggs
1/3 cup mayonnaise
1/3 cup all-purpose flour
3 Tbsp fresh dill (finely chopped (or 1 Tbsp parsley))
3/4 tsp salt or to taste
1/8 tsp black pepper
1 tsp lemon zest (plus lemon wedges to serve)
1 1/3 cups mozzarella cheese (shredded)
2 Tbsp olive oil to saute (divided)
1 cup Panko bread crumbs

Steps:

  • In a large mixing bowl, whisk together: 2 eggs, 1/3 cup mayo, 1/3 cup flour, 3 Tbsp dill, 1/2 tsp salt, 1/8 tsp black pepper and 1 tsp lemon zest.
  • Add in shredded chicken and 1 1/3 cups shredded mozzarella then stir until chicken is well coated in batter.
  • Cover the bowl and refrigerate the mixture at least 30 minutes (this will help with forming patties). Use a trigger release ice cream scoop to divide into 12-15 cakes then form into 1/2-inch thick patties. Dip both sides in Panko crumbs.
  • Place a large non-stick skillet over medium heat. Add 1 Tbsp olive oil and half of the chicken patties. Sauté for 3-4 minutes per side until golden brown, adding more oil as needed. Repeat with remaining patties.
  • As soon as patties are off the heat, sprinkle with salt and squeeze fresh lemon juice over the patties. Serve warm.

BISTRO CHICKEN

Bistro Chicken image

This chicken can be done in the oven or it is excellent in the slow cooker also. The sauce is so delicious and I suggest serving it over pasta, noodles, baked potatoes or with some good French bread.

Time 40m

Yield 4-6 serving(s)

Number Of Ingredients 7

1/2 tablespoon butter
1 tablespoon olive oil
6 boneless skinless chicken breast halves
salt and pepper
1 (14 1/2 ounce) can diced tomatoes, with their juice
1 -1 1/2 teaspoon dried thyme
1 can campbell condensed French onion soup

Steps:

  • If cooking on stove top: Preheat oven to 375 degrees.
  • In an ovenproof skillet, melt butter and olive oil over medium-high heat.
  • Sprinkle the chicken breasts with salt and pepper (to taste).
  • Panfry the chicken until both sides are golden but the chicken is not cooked through.
  • Remove the chicken from the skillet, add the tomatoes and thyme to skillet and cook until the sauce has reduced a bit, 4 to 5 minutes.
  • Add the soup and cook another 4 minutes, seasoning with more salt and pepper if desired.
  • Return the chicken to the skillet, and place in oven and cook for about 20 minutes or until chicken is cooked through.
  • If using slow cooker: Saute' the chicken breasts as above, place them in the slow cooker, add the sauce ingredients and cook on high for 3 hours or so.

Tips:

  • Ensure chicken is cooked thoroughly to prevent foodborne illness. Use a meat thermometer to check that the internal temperature has reached 165°F (74°C).
  • If you don't have panko breadcrumbs, you can make your own by pulsing regular breadcrumbs in a food processor until they are fine and crumbly.
  • Be careful not to overwork the chicken mixture, as this will make the cakes tough. Mix just until the ingredients are combined.
  • If the mixture is too wet, add more breadcrumbs. If it's too dry, add a little milk or cream.
  • When cooking the chicken cakes, make sure the oil is hot enough so that the cakes will sizzle when they are added to the pan. This will help to create a crispy crust.
  • Don't overcrowd the pan when cooking the chicken cakes. This will prevent them from cooking evenly.
  • Serve the chicken cakes immediately with your favorite dipping sauce, such as honey mustard, ranch dressing, or barbecue sauce.

Conclusion:

These chicken bistro cakes are a delicious and easy-to-make appetizer or main course. They are perfect for a party or a weeknight meal. With a few simple ingredients, you can create a dish that is sure to impress your friends and family. So next time you're looking for a new chicken recipe, give these chicken bistro cakes a try!
