~FOR THE HAWAIIAN SAUCE:
2 large boneless, skinless chicken breasts (about 2 pounds)
1 large pineapple, cut into 1 1/2 inch chunks
2 large red bell peppers, cut into 1 1/2 inch pieces
1 large onion, cut into 1 1/2 inch pieces
12 strips of thick cut bacon
1 1/2 cups pineapple juice
1 1/2 tablespoons cornstarch
1/2 cup brown sugar
2 tablespoons soy sauce
1/2 teaspoon salt
6 long skewers

Steps:

  • ~To make the Hawaiian sauce: * Combine all ingredients in a medium saucepan and stir until the cornstarch is dissolved. * Bring the mixture to a boil, reduce the heat to medium and simmer for 2 minutes. * Set-aside until ready to use. ~Thread the skewers. * Weave the bacon around each piece of chicken and pineapple, stick the bell pepper and onion together and weave the bacon around both of those. You'll need two strips of bacon per skewer if using 4 pieces of chicken and 3 pieces each of pineapple, bell pepper and onion. * Brush some olive or vegetable oil evenly over each kabob. * Preheat the grill to medium high. * Grill the kabobs for 10-15, turning a couple of times, until done. * Slather with hot Hawaiian sauce and serve immediately.

4 chicken breasts (boneless & skinless)
4 ounces small can pineapple chunks (in syrup for a sweeter flavor)
1/3 cup light brown sugar (enough to lightly cover each one)
1 lb bacon

Steps:

  • Preheat oven to 375 degrees.
  • Clean each chicken breast and cut into 4 pieces.
  • Wrap each piece of chicken with 1 strip of bacon (you can use a toothpick but it is not necessary if you tuck the bacon into itself).
  • Place each wrapped chicken piece into your pan (I generally spray mine with a cooking spray so it is easier to clean after).
  • Sprinkle the tops of each piece with the brown sugar.
  • Top each piece with a pineapple chunk or 2 and pour the juice and remaining pineapple into the pan for the chicken to cook inches.
  • Place in oven and cook for 30-45 minutes depending on the thickness of your chicken pieces.
  • Serve with rice or pasta & enjoy!

1/2 cup barbecue sauce
1 teaspoon chili powder
2 drops hot pepper sauce
1-1/4 pounds boneless skinless chicken breasts, cut into 12 strips
12 bacon strips

  • In a large resealable plastic bag, combine the ranch dressing, barbecue sauce, chili powder and hot pepper sauce; add chicken. Seal bag and turn to coat; refrigerate for at least 2 hours., In a large skillet, cook bacon over medium heat until partially cooked but not crisp. ¼ cup cider vinegar
2 tablespoons honey
2 tablespoons canola oil
