Sugar can be adjusted for sweetness, and if the sauce gets a bit thicker than desired I suggest adding a little chicken broth as it's thickening. Serve immediately over rice.

1 (16 ounce) package Polish sausage, or to taste, cut into 1-inch squares
1 large onion, thinly sliced
1 large green bell pepper, cut into 1-inch squares
¾ fresh pineapple - peeled, cored, and cut into chunks
2 tablespoons cornstarch
½ cup pineapple juice, or more to taste
⅓ cup packed brown sugar, or to taste
2 tablespoons cider vinegar
2 tablespoons soy sauce
2 teaspoons minced garlic

4 chicken breasts (boneless & skinless)
4 ounces small can pineapple chunks (in syrup for a sweeter flavor)
1/3 cup light brown sugar (enough to lightly cover each one)
1 lb bacon

Steps:

  • Preheat oven to 375 degrees.
  • Clean each chicken breast and cut into 4 pieces.
  • Wrap each piece of chicken with 1 strip of bacon (you can use a toothpick but it is not necessary if you tuck the bacon into itself).
  • Place each wrapped chicken piece into your pan (I generally spray mine with a cooking spray so it is easier to clean after).
  • Sprinkle the tops of each piece with the brown sugar.
  • Top each piece with a pineapple chunk or 2 and pour the juice and remaining pineapple into the pan for the chicken to cook inches.
  • Place in oven and cook for 30-45 minutes depending on the thickness of your chicken pieces.

500 g chicken breasts, roughy chopped
2 slices streaky bacon, rind removed and roughy chopped
1 teaspoon dried chives
1/2 teaspoon dried thyme
1/2 teaspoon dried rosemary
1/4 teaspoon dried sage
1/4 teaspoon ground pepper
2 tablespoons parmesan cheese
1 tablespoon garlic, crushed

Steps:

  • Combine all ingredients in a small bowl and mix well.
  • Run all ingredients through a meat grinder, return to bowl and mix again.
  • Refrigerate for 30 minutes or so (optional).
  • Put through the sausage maker attachment on meat grinder carefully guiding it onto a plate.
  • Cut into desired serving size.
  • Cook carefully on oiled BBQ or hotplate until cooked through, turning until browned on all sides.
