¼ cup soy sauce
¼ cup cider vinegar
2 tablespoons honey
2 tablespoons canola oil
10 large mushrooms, cut in half
2 green onions, minced
3 skinless, boneless chicken breast halves - cut into chunks
½ pound sliced thick cut bacon, cut in half
1 (8 ounce) can pineapple chunks, drained

Steps:

  • In a large bowl, mix the soy sauce, cider vinegar, honey, canola oil, and green onions. Place the mushrooms and chicken into the mixture, and stir to coat. Cover, and marinate in the refrigerator at least 1 hour.

  • Remove the mushrooms and chicken from the marinade and shake off excess. Pour the marinade into a small saucepan and bring to a boil over high heat. Reduce heat to medium-low and simmer for 10 minutes; set aside.
  • Wrap the chicken chunks with bacon, and thread onto skewers so that the bacon is secured. Alternate with mushroom halves and pineapple chunks.
  • Lightly oil the grill grate. Arrange skewers on the prepared grill. Cook 15 to 20 minutes, brushing occasionally with remaining soy sauce mixture, until bacon is crisp and chicken juices run clear.

Tips:

  • Choose the right chicken: Boneless, skinless chicken breasts or thighs are best for kebabs. Cut the chicken into 1-inch pieces.
  • Use a variety of vegetables: Colorful vegetables like bell peppers, onions, and pineapple add flavor and texture to the kebabs.
  • Marinate the chicken and vegetables: Marinating helps to tenderize the chicken and infuse it with flavor. You can use a simple marinade made with olive oil, lemon juice, garlic, and herbs, or try a more flavorful marinade like the one in this recipe.
  • Skewer the chicken and vegetables: Use metal or wooden skewers to skewer the chicken and vegetables. Make sure to leave some space between the pieces so that they cook evenly.
  • Grill or bake the kebabs: You can cook the kebabs on a grill or in the oven. If you're grilling the kebabs, preheat the grill to medium-high heat. If you're baking the kebabs, preheat the oven to 400 degrees Fahrenheit.
  • Cook the kebabs until the chicken is cooked through: The chicken is cooked through when it reaches an internal temperature of 165 degrees Fahrenheit. You can check the temperature with a meat thermometer.

Conclusion:

Chicken bacon pineapple kebabs are a delicious and easy-to-make meal that's perfect for summer gatherings. With a few simple ingredients and a little bit of preparation, you can create a flavorful and visually appealing dish that everyone will love. So fire up the grill or preheat the oven and get ready to enjoy these tasty kebabs!
