Time 40m

Yield 24 pinwheels

Number Of Ingredients 8

8 slices bacon
6 ounces cream cheese, at room temperature
6 scallions, green part only, thinly sliced
Kosher salt and freshly ground black pepper
2 sheets frozen puff pastry (from a 17.3-ounce package), thawed
All-purpose flour, for dusting
4 ounces Cheddar, grated
1 large egg

Steps:

  • Preheat the oven to 375 degrees F. Line 2 baking sheets with parchment paper.
  • Cook the bacon in a large skillet over medium-high heat until crispy, 5 to 8 minutes. Remove to a paper towel-lined plate to drain and allow to cool slightly, then finely chop. Set aside.
  • In a small bowl, stir together the cream cheese and scallions. Season with salt and pepper.
  • Unfold the pastry sheets on a lightly floured work surface. Lightly roll each piece of pastry into a 10-inch square. Spread the cream cheese mixture over the entire surface of each piece of pastry, leaving a slight border around the edges. Sprinkle the Cheddar and bacon in an even layer over the top of the cream cheese mixture. Tightly roll each pastry sheet into a log (jelly roll style), then pinch the seam closed and place seam-side down on the work surface.
  • Using a sharp knife, cut both logs crosswise into 12 pinwheels each, approximately 1 inch thick. Transfer 12 pinwheels to each prepared baking sheet, spiral-side up. In a small bowl, whisk the egg and 1 tablespoon water until combined to make an egg wash. Brush the tops and sides of the pinwheels with the egg wash.
  • Bake the pinwheels until puffed and golden, 25 to 30 minutes. Serve warm.

A very tasty low carb snack! Quick & easy, just what I like! I also think these could be popped in the air fryer for a few minutes for a warmed appetizer.

Time 20m

Number Of Ingredients 9

8 oz cream cheese, softened
3/4 c real bacon bits or crisp cooked bacon chopped
1/4 c green onion or sweet onion minced
1 c finely chopped chicken...i use rotisserie
1 c fresh shredded cheddar cheese
1 3/4 Tbsp dry ranch dressing seasoning
2 Tbsp milk
Dash accent
3-4 large tortilla shells

Steps:

  • 1. In a medium bowl, thoroughly mix all ingredients except the tortillas.
  • 2. Lay out tortilla and spread mixture to edges evenly. Begin rolling firmly, then wrap in plastic wrap and refrigerate for a couple hours.
  • 3. When ready to plate, remove from refrigerator and with a serrated knife gently slice ends off.
  • 4. Slice into desired thickness and plate. Now the yummy nuggets are ready to devour! P.S I like serving these at room temperature, but you can serve them straight from the fridge as well.

Tips:

  • Mise en Place: Before you start cooking, make sure you have all your ingredients and equipment ready. This will help you stay organized and avoid scrambling.
  • Use Fresh Ingredients: Fresh ingredients will always give you the best results. If possible, use organic or locally-sourced ingredients for the best flavor.
  • Don't Overcook the Chicken: Chicken is a delicate meat, so it's important to not overcook it. Cook it until it reaches an internal temperature of 165°F (74°C).
  • Use a Sharp Knife: A sharp knife will make it much easier to cut the chicken and bacon. It will also help you get clean, even slices.
  • Be Careful When Rolling the Pinwheels: Be careful not to roll the pinwheels too tightly, or they will be difficult to cut. Roll them just tightly enough to hold them together.
  • Chill the Pinwheels Before Baking: Chilling the pinwheels before baking will help them hold their shape better. This will also make them easier to cut.
  • Use a Non-Stick Baking Sheet: To prevent the pinwheels from sticking, use a non-stick baking sheet or line a regular baking sheet with parchment paper.
  • Serve Warm or at Room Temperature: Chicken Bacon Cheddar Ranch Pinwheels can be served warm or at room temperature. They are best enjoyed within a day or two of baking.

Conclusion:

Chicken Bacon Cheddar Ranch Pinwheels are a delicious and easy-to-make appetizer or snack. They are perfect for parties, potlucks, or game day gatherings. With their combination of savory flavors and creamy ranch dressing, these pinwheels are sure to be a hit with everyone who tries them.
