2 tablespoons olive oil, divided
¾ pound skinless, boneless chicken breast meat - cut into bite-size pieces
4 cloves garlic, minced
12 ounces asparagus, trimmed and cut into 1 inch pieces
1 teaspoon crushed red pepper flakes
salt and pepper to taste
½ cup grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water for 8 to 10 minutes, or until al dente. Drain, and transfer to a large bowl.

It uses some of my favorite ingredients and I can not wait until late Spring when fresh, local asparagus is in season! A neighboring town, Hadley, Massachusetts is famous for its asparagus and I eat more than my fill every year!

1 lb penne rigate or 1 lb rotini pasta
6 -8 ounces of fully cooked boneless chicken, seasoned to your own taste (Italian seasoning, salt, and garlic work well in this recipe and I use leftover roast chicken)
1 lb fresh asparagus
16 ounces fresh grape tomatoes
2/3 cup fresh basil, chopped
1/2 cup pitted coarsely chopped olive (kalamata or the olives of your choice)
1 cup crumbled feta or 1/2 cup shredded parmesan cheese
1/4 cup lemon juice
1/4 cup balsamic vinegar
1/4 cup extra virgin olive oil
1 teaspoon salt
1 teaspoon fresh ground black pepper

Steps:

  • Bring 4 quarts of water to boil in a stockpot.
  • Cook pasta according to package directions until al dente.
  • Drain pasta and keep warm.
  • Wash asparagus and remove and discard tough ends.
  • Slice asparagus into one inch pieces.
  • Cook asparagus in a large skillet in shallow water and steam for 1-2 minutes until crisp tender.
  • Drain well and reserve.
  • Chop chicken into one inch pieces.

1 tablespoon red wine vinegar
1 tablespoon brown sugar

1/4 cup soy sauce

5 tablespoons sesame seeds, toasted
1 lb thin asparagus, trimmed
3 scallions, white bulb and inches green cut up
1 small cucumber, halved and seeded cut into 1/4 inch dice

Steps:

  • Bring a large pot of water to boil. Add the linguine and cook until just tender. Drain and rinse under cold water. Drain again, and set aside in a large mixing bowl.
  • Place the garlic, vinegar, brown sugar, peanut butter and soy sauce in a food processor. Process for one minute. With motor running, slowly add the sesame and chile oils through the feed tube, and process until well blended.
  • Shred the chicken into 2 inc julienne and toss with linguine. Add the sauce and 4 T of the sesame seeds and toss to coat well.
  • Cut the asaragus on a diagonal into 1 inch lengths. Blanch in a saucepan of boiling water for 1 minutes. Drain, rinse under cold water and pat dry.

  • Set your grill to high heat. Lightly season chicken breasts with salt and pepper. Grill the chicken breasts until done. To check for doneness, the safest and surest method is to use a digital meat thermometer. Insert the tip into the thickest part of the breast and when the internal temperature reaches 165°F, remove it from the grill. and slice into strips, set aside. Cook the pasta in salted water according to package instructions. Add the asparagus to the pot during the last 3 minutes of cooking time. Reserve 1/4 cup of pasta cooking liquid. In a small pot, combine the heavy cream, butter and 1/2 teaspoon salt and 1/4 teaspoon pepper over medium-high heat. Steps:

  • In a pot, cook pasta according to package instructions, drain, then set aside.

1/2 cup sun-dried tomato packed in oil, drained and cut into small pieces

Steps:

  • For Pesto: Place all ingredients into a food processor and combine thoroughly.

  • Trim the asparagus and cut into short lengths on the diagonal - keep the tips separate. (If you like, peel the stems to give a more vibrant colour when cooked.) Cook the stems in salted boiling water for about 4 minutes, then add the tips and cook for 1 minute more. Drain and refresh under cold running water.
  • Peel the lemons with a serrated knife, remove all the white pith, then cut into segments by slicing each side of the pieces of membrane. 2 zuchini, sliced into 1/4 inch strips
2 small/medium red bell peppers (chopped)
6 green onions (thin slices)

4 cups grilled chicken breasts
2/3 cup Parmesan cheese
salt and pepper to taste
Basil Sauce to taste
Basil Sauce
1/4 c. fresh basil (chopped)
1 clove garlic (chopped)
2 eggs (may use egg substitute)
1 tsp. dry mustard
1 tsp lemon juice
1 tsp. salt
1 TBS. Red wine vinegar
½ c. fat free sour cream
1/2 c. olive oil

Steps:

  • Cook the fetuchini and drain. Blanch the asparagus. Combine all the ingredients for the salad except the Basil Sauce. For the Basil Sauce: In a blender of food processor combine the basil and garlic and blend for a couple of minutes. Add the eggs and the next four ingredients. Blend. Add the sour cream and oil and blend until you get a smooth texture. Pour the Basil Sauce over the salad until you have the desired moistness. Toss and chill until ready to serve.

  • Cut the top 1/4th of the garlic bulb off to expose tops of cloves.
  • Brush garlic lightly with olive oil, place on oven-safe pan in the corner.

  • In a frying pan, heat 3 tablespoons of olive oil and add chicken pieces - stir often to cook each piece and each side evenly until golden brown.
  • In a large bowl, empty chicken pieces and remaining olive oil, toss in pasta and mozzarella.
  • Cut asparagus into bite size pieces and add to pasta mixture.
  • Remove garlic cloves from husk and chop or mash with a knife or fork into small pieces and mix well into pasta mixture.

2 tablespoons (30 ml) grapeseed oil
2 chicken breasts, boneless and skinless, thinly sliced
4 thin slices of prosciutto, chopped into small pieces (optional)
1 tablespoon (15 ml) garlic powder
6 - 8 stalks of asparagus, chopped into bite size chunks
1/2 small onion, thinly diced
1/4 cup (60 ml) chicken stock (white wine might work too)
kosher or sea salt and black pepper, to taste
2 garlic cloves, crushed
1 tablespoon (15 ml) fresh rosemary, trimmed from stalk and chopped into fine bits
pasta, freshly cooked or leftovers - angel hair, linguine or your choice
1 1/2 cups (375 ml) freshly grated asiago or parmesan cheese

Steps:

  • Prepare ingredients as noted. Add oil to a deep dish frying pan over medium heat on stove top. Once oil is heated, add chicken breasts, prosciutto, onion, garlic powder, a bit of salt and pepper. Saute together, stirring periodically, for 2 to 3 minutes before adding asparagus, crushed garlic and rosemary. Add chicken stock (or white wine) and cover for 3 or 4 minutes, stirring from time to time, until chicken is cooked (not overdone). (As the chicken is thinly sliced it won't take long to cook. The asparagus should be crisp with a bright colour when the pasta is served.) Add enough pasta for two people. Mix with other ingredients and heat through. This shouldn't take long. Add cheese and melt through pasta, etc. Season with pepper and serve.

2 c asparagus trimmed and cut into 2 inch pieces
1 1/2 c cooked chicken chopped
1/2 red onion sliced
4 Tbsp peanut oil
2 Tbsp each lemon juice and fresh tarragon chopped
1 Tbsp dijon mustard
1 Tbsp coarse whole grain mustard
1/2 c crumbled gorgonzola cheese
salt and pepper to taste
fresh parsley for garnish

Steps:

  • 1. Cook the pasta in boiling salted water. Add the asparagus the last 3 minutes of cooking the pasta. Drain
  • 2. Place the pasta in a large bowl. Add the red onion and cooked chicken.
  • 3. Whisk the oil, lemon juice, tarragon, and mustards. Pour over the pasta mixture. Stir in the Gorgonzola cheese.
  • 4. Taste and season with salt and pepper. Garnish with parsley

1 tablespoon olive oil
1 teaspoon minced garlic
1 red bell pepper, chopped
