1-1/2 teaspoons salt
3/4 teaspoon dried thyme
1/2 teaspoon pepper
1/4 to 1/2 teaspoon caraway seeds
1-1/2 pounds potatoes (about 4 medium), cut into 3/4-inch pieces
4 medium carrots, cut into 1/4-inch slices
1 medium red onion, halved and sliced
1 celery rib, thinly sliced
2 pounds boneless skinless chicken breasts, cut into 1-inch pieces
2 tablespoons olive oil
1 bay leaf
1 large tart apple, peeled and cut into 1-inch cubes
1 tablespoon cider vinegar
1-1/4 cups apple cider or juice
Minced fresh parsley

Steps:

  • Mix first 4 ingredients. In a 5-qt. slow cooker, layer vegetables; sprinkle with half the salt mixture., Toss chicken with oil and remaining salt mixture. In a large skillet over medium-high heat, brown chicken in batches. Add to slow cooker. Top with bay leaf and apple. 2 tablespoons olive oil
1 medium onion, chopped
1 clove garlic, minced
3 cups diced sweet potatoes
2 McIntosh apples - peeled, cored, and diced
1 cup diced carrots
3 cups chicken broth
½ cup apple cider
4 medium skinless, boneless chicken breasts, cubed
¼ teaspoon ground black pepper
¼ teaspoon dried rosemary, crushed
¼ teaspoon ground turmeric
1 bay leaf

1 onion, chopped
1 -2 tablespoon minced fresh garlic

1 tablespoon curry powder (or to taste)

2 lbs chicken thighs (about 8)
1/2-1 teaspoon grated fresh lemon rind
2 tablespoons lemon juice (or dry white wine)
1/4 cup flour
1 1/2 cups milk or 1 1/2 cups half-and-half cream
1/2 cup good quality chicken broth (can use up to 1 cup)
2 cups chopped carrots (OR 1 cup of each) or 2 cups peeled sweet potatoes (OR 1 cup of each)
2 small tart apples, chopped
