5 teaspoons sea salt
2 1/2 teaspoons ground cinnamon
2 1/2 teaspoons ground cloves
2 1/2 teaspoons ground coriander
2 1/2 teaspoons ground ginger
1 teaspoon granulated onion
2 Granny Smith apples, finely chopped
15 feet hog casing

Steps:

  • Par-freeze meat for 30 minutes. Have a meat grinder and stuffing attachments ready and assembled.
  • In a small bowl, combine the salt, cinnamon, cloves, coriander, ginger and granulated onion so they will evenly disperse when adding to the ground meat. Slice the meat into 1-inch cubes. Grind the meat and apples together using the coarse disc on your grinder.
  • In a large bowl, combine meat and apple mixture with the seasonings. Using your hands, mix the meat and seasonings well. This process may take a few minutes to get the seasonings well dispersed. Stuff the forcemeat firmly into the casings. Twist the finished sausage into 6-inch links.

2 tablespoons plus 1 teaspoons extra-virgin olive oil, divided
1/2 pound chicken-apple sausage, removed from casing
1/2 cup red onion, diced
2 tablespoons finely diced jalapeno
1/2 cup red bell pepper
8 eggs
1/2 cup milk
1/2 teaspoon paprika
1/2 teaspoon sea salt
1 teaspoon black pepper
2 (9-inch) flour tortillas
1/4 cup jack cheese, shredded
1/4 cup Cheddar, shredded
1/2 cup tomatoes, diced
1/2 cup scallions diced

Steps:

  • Preheat oven to 350 degrees F.
  • In a saute pan over medium-high heat, add 2 tablespoons oil and the chicken sausage, onions, jalapenos, peppers and saute until vegetables have softened.
  • In medium bowl, mix eggs, milk, paprika and salt and pepper.
  • Add chicken sausage and vegetable mixture and eggs together. Heat a medium saute pan over medium heat and add 1 teaspoon olive oil, and pour in egg mixture. Cook for 3 minutes on each side, mixture should be slightly firm and moist. In the mean time add tortillas to oven and toast for 3 to 5 minutes until golden brown, then remove.
  • Remove frittata from pan, place one tortilla on bottom of pan and spread with 1/2 of the cheese, place cooked frittata on top, and top frittata with second tortilla. Top tortilla with remaining cheese and place pan in oven for 5 minutes or until cheese melts.
  • Remove from oven and garnish with scallions and tomatoes.

4 chicken-apple sausages (I use Aidel's)
1 (8 ounce) can crescent rolls
1 teaspoon sesame seeds
1/4 cup red currant jelly
1/4 cup Dijon mustard

Steps:

  • In a medium sized bowl add red currant jelly; stir jelly until smooth consistency (not lumpy). Add Dijon Mustard to jelly and stir until smooth and well blended. This is the Sweet Mustard Dipping sauce, refridgerate until ready to serve with the sausages.
  • Cut each sausage link in half lengthwise. In medium non-stick skillet, cook sausages over medium high heat until lightly brown on each side. Browning the sausage isn't absolutely necessary but it helps cut down some of the greasiness after baking in so the crescent rolls don't slide off.

  • Open tube of crescent rolls and separate each roll (into triangles).
  • Place a browned 1/2 sausage link on each triangle and roll up; so the crescent roll is wrapped around the 1/2 sausage link. Place on an ungreased cookie sheet. Repeat with the rest of the sausages and crescent rolls. Top the crescent rolls and sausages with sesame seeds.
  • Bake sausages wrapped in crescent rolls at 350°F for 17 minutes or until the crescent roll is golden brown.
