SESAME CHICKEN WITH SNOW PEAS

Skip the take-out and make your own version of this popular sweet-and-savory Chinese-American dish. We've lightened our version up by giving the chicken a quick marinade in soy and honey instead of coating and deep-frying it as most restaurants do. Steamed snow peas and brown rice round out the meal.

Provided by Food Network Kitchen

Time 40m

Yield 4 servings

Number Of Ingredients 16

5 tablespoons low-sodium soy sauce
4 teaspoons toasted sesame oil
2 teaspoons honey
1 1/4 pounds skinless, boneless chicken breasts, cut into 3/4-inch chunks
6 teaspoons canola oil
2 scallions, thinly sliced
1 tablespoon grated peeled ginger
3 cloves garlic, minced
1 1/4 cups low-sodium chicken broth
3 tablespoons sugar
3 to 4 teaspoons cornstarch
1 tablespoon rice vinegar
1 teaspoon chili paste
4 cups snow peas, trimmed
Cooked brown rice, for serving (optional)
2 tablespoons toasted sesame seeds

Steps:

  • Whisk 3 tablespoons soy sauce, 2 teaspoons sesame oil and the honey together in a medium bowl. Add the chicken, toss and marinate 20 minutes.
  • Remove the chicken from the marinade using a slotted spoon. Heat 2 teaspoons canola oil in a nonstick skillet over medium-high heat. Cook the chicken in 2 batches, turning once or twice, until browned, 3 to 5 minutes (add 2 more teaspoons canola oil between batches). Transfer the chicken to a plate and wipe out the skillet.
  • Heat the remaining 2 teaspoons canola oil in the skillet. Add the scallions, reserving some of the green parts for topping. Add the ginger and garlic and cook, stirring, 1 minute. Whisk the broth, sugar, cornstarch, vinegar, chili paste and the remaining 2 tablespoons soy sauce in a bowl; add to the skillet and cook, stirring, until thickened, 3 to 4 minutes. Stir in the remaining 2 teaspoons sesame oil.
  • Meanwhile, cook the snow peas in a steamer basket set over a few inches of boiling water until crisp-tender, 2 to 3 minutes.
  • Return the chicken to the skillet with the sauce and heat through. Serve the chicken and snow peas over brown rice, if desired. Top with the sesame seeds and reserved scallion greens.

How to Make Stir-Fry in Just 35 Minutes image

Stir-fry is the perfect weeknight dinner: It's quick, easy, and a total crowd-pleaser. Check out this recipe, plus tips for how to make the best stir-fry.

Categories     weeknight meals     dinner     main dish     poultry

Time 35m

Yield 4-6 servings

Number Of Ingredients 12

1/2 c. low-sodium soy sauce, plus more for serving
3 tbsp. sherry
2 tbsp. packed brown sugar
2 tbsp. cornstarch
1 tbsp. minced fresh ginger
1 1/2 lb. skinless, boneless chicken thighs, trimmed of fat and cut into 3/4-inch pieces
3 tbsp. peanut oil
8 oz. snow peas, trimmed
Kosher salt, to taste
Cooked white rice, for serving
Red pepper flakes, for topping
Chopped roasted cashews, for topping (optional)

Steps:

  • Mix the soy sauce, sherry, brown sugar, cornstarch, and ginger in a small bowl. Pour about a third of the mixture over the chicken in a large bowl and toss with your hands; set aside. Reserve the remaining liquid.
  • Heat the peanut oil in a large cast-iron skillet or wok over high heat. Add the snow peas and stir-fry for 45 seconds. Remove to a plate and set aside.
  • Let the skillet get very hot again. Using tongs, add the chicken mixture, leaving most of the marinade in the bowl. Spread out the chicken as you add it to the pan but do not stir for a good minute so the chicken gets nice and brown on the bottom. Then flip the chicken and cook through, tossing occasionally, 5 to 6 minutes.
  • Add ½ cup water, the reserved marinade, and the snow peas to the skillet. Cook over high heat, stirring, for 30 seconds, then turn off the heat. (The sauce will thicken as it sits.) Season with salt only if it needs it. Serve over rice and top with red pepper flakes and cashews, if desired. Serve with more soy sauce.

Tips:

  • Use high-quality ingredients: Fresh, flavorful ingredients will make a big difference in the final dish.
  • Don't overcook the chicken: Chicken breasts can dry out quickly, so cook them until they are just cooked through.
  • Use a variety of vegetables: Snow peas, broccoli, and carrots are all great choices for this dish, but you can use any vegetables that you like.
  • Season the dish well: Salt, pepper, and garlic powder are all essential seasonings for this dish. You can also add other herbs and spices to taste.
  • Cook the pasta al dente: Al dente pasta is slightly firm to the bite and will hold up better in the sauce.
  • Serve the dish immediately: This dish is best served hot, so make sure to serve it as soon as it is finished cooking.

Conclusion:

This chicken and snow pea pasta is a quick and easy meal that is perfect for a weeknight dinner. It is also a great way to use up leftover chicken. The combination of chicken, snow peas, and pasta is delicious and satisfying, and the sauce is creamy and flavorful. This dish is sure to please everyone at the table.
