QUESADILLAS WITH CHICKEN SAUSAGE AND ROASTED VEGETABLES

Quesadillas with Chicken Sausage and Roasted Vegetables image

You may substitute an equal amount of just about any cooked meat for the sausage in this recipe. Try leftover roasted chicken or pork loin.

Provided by Martha Stewart

Categories     Food & Cooking     Appetizers

Time 30m

Number Of Ingredients 7

4 cups leftover Roasted Sweet Potatoes and Mushrooms
4 flour tortillas, (10-inch or burrito-size)
8 ounces precooked spicy chicken (or turkey) sausage, thinly sliced diagonally
6 ounces coarsely grated Monterey Jack cheese
1 tablespoon olive oil
1/2 cup reduced-fat sour cream
Prepared fresh tomato salsa (optional)

Steps:

  • Preheat oven to 425 degrees. Divide the vegetables evenly over half of each tortilla; layer with sausage slices, and sprinkle with cheese. Fold and press to seal edges. Brush with olive oil; transfer to two rimmed baking sheets.
  • Bake, rotating sheets halfway through, until cheese has melted and tortillas are golden brown, about 15 minutes. Slice into wedges, and serve topped with sour cream, and, if desired, salsa.

Tips:

  • Choose the right tortillas: Look for tortillas that are soft and pliable, but not too thin. Corn tortillas are a traditional choice, but you can also use flour tortillas or whole wheat tortillas.
  • Shred the chicken and sausage finely: This will help the quesadillas cook evenly and prevent the filling from falling out.
  • Use a generous amount of cheese: Cheese is what makes quesadillas so delicious and gooey. Use a blend of shredded cheddar and mozzarella cheese for the best flavor.
  • Add your favorite toppings: Quesadillas are a great way to use up leftover vegetables and other ingredients. Try adding diced bell peppers, onions, tomatoes, or black beans to your quesadillas.
  • Cook the quesadillas over medium heat: This will help prevent the tortillas from burning and allow the cheese to melt evenly.
  • Serve the quesadillas with your favorite dipping sauce: Salsa, guacamole, or sour cream are all great options.

Conclusion:

Quesadillas are a delicious and easy-to-make meal that can be enjoyed for breakfast, lunch, or dinner. They are also a great way to use up leftover chicken and sausage. With a few simple tips, you can make perfect quesadillas every time. So next time you're looking for a quick and tasty meal, give quesadillas a try!
