3 small boneless skinless chicken breasts, cut into chunks
3 slices bacon, cut into 1/2-inch wide strips
1 cup water
2 (10 ounce) cans tomato sauce
¾ cup green olives with pimientos
5 cloves garlic
2 tablespoons vermouth
2 tablespoons lemon juice
½ tablespoon red pepper flakes, or to taste

  • Pour water into Dutch oven and bring to a boil while scraping the browned bits of food off of the bottom with a wooden spoon.
  • Stir tomato sauce, green olives, garlic, vermouth, lemon juice, and red pepper flakes into chicken mixture. Reduce heat to medium and, stirring occasionally, simmer until liquid reduces to a thick sauce, about 1 hour.

Tips:

  • For the best flavor, use bone-in, skin-on chicken thighs or drumsticks. The bones and skin will add richness and depth to the stew.
  • Brown the chicken well before adding it to the stew. This will help to develop its flavor and prevent it from becoming dry.
  • Use a variety of vegetables in your stew. This will add color, texture, and nutrients. Some good choices include carrots, potatoes, onions, celery, and green beans.
  • Add a bay leaf or two to the stew for extra flavor. Remove the bay leaves before serving.
  • Serve the stew with a side of bread, rice, or pasta. This will help to soak up the delicious sauce.

Conclusion:

Chicken and olive stew is a hearty, flavorful, and easy-to-make dish that is perfect for a weeknight meal. It is also a great way to use up leftover chicken. With a few simple ingredients and a little bit of time, you can have a delicious stew that the whole family will enjoy.
