Time 20m

Yield 4 serving(s)

Number Of Ingredients 10

1 lettuce, of your choice
1 bunch watercress, broken into sprigs
500 g cooked chicken, chopped
1 red pepper, sliced
4 nectarines, sliced
2 stalks celery, sliced
black pepper, dressing
3 teaspoons crushed black peppercorns
1 tablespoon olive oil
2 tablespoons red wine vinegar

Steps:

  • Arrange lettuce leaves, watercress, chicken, red pepper, nectarines and celery on a large platter.
  • Spoon dressing over.
  • To make dressing, put all ingredients in a jar with a lid and shake well.

Tips:

  • Choose ripe nectarines: Look for nectarines that are fragrant and have a slight give when you press them gently. Avoid nectarines that are too hard or have bruises or blemishes.
  • Slice the nectarines thinly: This will help them absorb the dressing better and make them easier to eat.
  • Use a flavorful dressing: The vinaigrette dressing in this recipe is a great option, but you could also use a honey mustard dressing, a balsamic vinaigrette, or a simple olive oil and lemon juice dressing.
  • Don't overcook the chicken: Overcooked chicken will be dry and tough. Cook it until it is just cooked through, about 10 minutes per side.
  • Serve the salad immediately: This salad is best enjoyed fresh. The nectarines will start to brown if they sit for too long.

Conclusion:

This chicken and nectarine salad is a light and refreshing summer salad that is perfect for a weeknight meal or a special occasion. The combination of sweet nectarines, savory chicken, and tangy dressing is sure to please everyone at the table.
