Number Of Ingredients 13

1 lb. rigatoni pasta
2 boneless, skinless chicken breasts, cut into bite-sized pieces
8 oz. baby Portabella mushrooms, sliced
1 shallot, minced
1 tablespoon garlic, minced
1/4 cup Parmesan cheese, grated
1 cup chicken broth
1 cup heavy cream
1/2 teaspoon dried thyme
1/4 teaspoon sage
1/4 teaspoon nutmeg
Salt and pepper to taste
Fresh parsley to garnish, chopped

Steps:

  • Bring a pot of salted water to boil and cook the rigatoni until al dente. Reserve 1/4 cup of pasta water then drain and set aside.

  • Add the mushrooms and cook until the mushrooms have cooked down, about 2 minutes.
  • Add in chicken broth and deglaze the pan, scraping up any browned bits.
  • Reduce heat to medium and pour in heavy cream, 1/4 cup of the reserved pasta water and add in Parmesan cheese. Stir until the cheese has melted into the sauce.
  • Season with salt, pepper and nutmeg and simmer until the sauce is reduced by half or coats the back of a spoon.
  • Add in the pasta and toss to combine with the sauce.
  • Dish and serve hot topped with the chicken and fresh parsley.

Time 22m

Yield 4 to 6 servings

Number Of Ingredients 11

1 pound rigatoni pasta
2 tablespoons olive oil
2 shallots, minced
1 clove garlic, minced
Salt and freshly ground black pepper
1 pound assorted mushrooms, (such as cremini, shiitake and button), cleaned and sliced
1/2 cup white wine
1/2 cup vegetable stock
1 cup (8 ounces) mascarpone cheese, at room temperature
1/2 cup grated Parmesan
1/4 cup chopped fresh chives

Steps:

  • Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes.
  • While the pasta is cooking:
  • Heat the oil in a large skillet over medium-high heat. Add the shallots and garlic to the pan. Season with salt and pepper. Cook until soft, about 2 minutes. Add the mushrooms to the pan and season with salt and pepper. Cook until mushrooms are tender, stirring occasionally, about 5 to 7 minutes. Turn the heat to high. Add the wine and cook for 3 minutes until all the liquid evaporates. Add the stock and simmer until liquid is slightly reduced. Remove the pan from the heat. Add the mascarpone cheese. Stir until creamy. Drain the pasta, reserving about 1 cup of the pasta water, and transfer to a serving bowl. Add the mushroom mixture and the Parmesan. Season with salt and pepper, to taste. Toss well to coat pasta, adding the reserved pasta water, if needed, to loosen the pasta. Garnish with the chopped chives. Serve immediately.

Tips:

  • Use fresh ingredients: Fresh chicken, mushrooms, and vegetables will give your dish the best flavor.
  • Season your chicken well: Don't be afraid to use plenty of salt and pepper. You can also add other spices, such as garlic powder, onion powder, or paprika.
  • Cook your chicken thoroughly: Make sure the chicken is cooked all the way through before you add it to the pasta. This will help prevent foodborne illness.
  • Use a variety of mushrooms: Different types of mushrooms will give your dish a more complex flavor. Try using a combination of white, cremini, and shiitake mushrooms.
  • Don't overcrowd the pan: When you're cooking the mushrooms, don't overcrowd the pan. This will prevent them from cooking evenly.
  • Use a good quality pasta: A good quality pasta will hold its shape better and won't get mushy. Look for a pasta that is made with durum wheat.
  • Cook the pasta al dente: Cook the pasta according to the package directions, but don't overcook it. Al dente pasta is still slightly firm to the bite.
  • Reserve some of the pasta water: When you drain the pasta, reserve some of the pasta water. You can use this to thin out the sauce if it's too thick.
  • Add the pasta to the sauce: Once the sauce is ready, add the pasta to the pan and stir to combine. Cook for a few minutes, until the pasta is heated through.
  • Serve immediately: Serve the pasta immediately, garnished with fresh parsley or basil.
