Steps:
- 1.Add 1 Tablespoon butter and a drizzle of extra virgin olive oil to a large nonstick skillet over medium-high heat (oil will keep butter from burning.) Mix flour and lots of salt and pepper in a shallow dish then dredge chicken breasts and add to skillet. Saute until golden brown on both sides, 2-3 minutes a side. Chicken does not have to be completely cooked through. Remove to a plate then set aside. 2.Add remaining tablespoon butter to skillet then add mushrooms, leeks, and shallot, season with salt and pepper, then saute until mushrooms are golden brown and tender, 5 minutes. Add garlic then saute for one more minute. Add chicken broth and tarragon then nestle chicken back into skillet and simmer until sauce has thickened and reduced, and chicken is cooked through, 3-4 minutes. Squeeze a bit of lemon juice over the skillet then stir to combine. Add more salt and pepper if necessary then serve.
Tips:
- Mise en place: Before you start cooking, make sure you have all your ingredients and equipment ready. This will help you stay organized and prevent any scrambling.
- Use a large skillet: A large skillet will give you plenty of room to cook the chicken and mushrooms without overcrowding them.
- Cook the chicken in batches: If you're using a small skillet, you may need to cook the chicken in batches. Just be sure to remove the chicken from the skillet before adding the mushrooms.
- Don't overcrowd the skillet: When you add the mushrooms to the skillet, make sure you don't overcrowd them. This will help them cook evenly.
- Season to taste: Be sure to season the chicken and mushrooms with salt and pepper to taste.
- Serve immediately: This dish is best served immediately after it's cooked. The chicken and mushrooms will be hot and juicy, and the sauce will be creamy and flavorful.
Conclusion:
This chicken and mushroom skillet is a quick and easy weeknight meal that's also packed with flavor. The chicken is tender and juicy, the mushrooms are earthy and savory, and the sauce is creamy and flavorful. Serve this dish over rice, pasta, or mashed potatoes for a complete meal.
