CHICKEN AND LEEK PIE

Chicken and Leek Pie image

Make and share this Chicken and Leek Pie recipe from Food.com.

Provided by Lou van

Categories     Savory Pies

Time 2h5m

Yield 6 serving(s)

Number Of Ingredients 19

1 1/2 kg whole corn-fed chicken
1/2 teaspoon peppercorn
2 bay leaves
3 sprigs fresh thyme
1 onion, halved
1 celery rib
1/2 teaspoon salt
4 medium eggs
25 g butter
2 tablespoons olive oil
6 bacon, rashers cut into large pieces
2 leeks, thinly sliced
2 tablespoons plain flour
2 tablespoons grainy mustard
4 tablespoons creme fraiche
4 tablespoons chopped fresh parsley
squeeze lemon juice
250 g puff pastry
beaten egg, for glazing

Steps:

  • Put the chicken into a deep pan that is just large enough to hold it quite snugly. Pour in enough water to half cover the bird, then tip in the peppercorns, bay leaves, thyme, onion and celery. Add the salt and bring to the boil on the hob, then reduce the heat, cover tightly and simmer for 1-11⁄4 hours until tender.
  • Transfer the chicken to a plate. Strain 425ml/3⁄4 pint of the stock into a measuring jug (top up with water if you need to). Strip the meat off the chicken, cut into bite-sized pieces and put in a 1.7 litre/3 pint pie dish.
  • Put the eggs in boiling water and boil for 6 minutes. Drain, cool them under cold water and remove the shells. Quarter the eggs and nestle them in the pie dish among the chicken pieces.
  • Heat the butter and oil in a large frying pan and fry the bacon until crisp. Add the leeks and cook for 2 minutes until softened. Stir in the flour and cook for 1 minute. Pour in the chicken stock a third at a time, stirring continuously and making sure the sauce is thick and smooth before adding the next batch. Stir in the mustard, crème fraîche and parsley, then add a squeeze of lemon juice and black pepper to taste. Add salt if needed. Spoon over the chicken and leave to cool.
  • Meanwhile, preheat the oven to 220C/Gas 7/fan 200°C Reserve a quarter of the pastry for decoration and roll out the remainder to a shape about 5cm/2in larger than the top of the pie dish, then cut a 2.5cm/1in strip from all round the edge. Brush the edge of the dish with water and stick the pastry strip to it. Brush the strip with water. Flip the pastry lid over the rolling pin, lift it up and unroll over the pie. Press the edge on to the pastry strip to seal, and trim any excess with a sharp knife.
  • Tap the blade of a small sharp knife all along the outside edge of the pastry (this helps the edge to rise during cooking), then flute it using the back of the knife. Make a hole in the lid centre with the tip of the knife, to allow steam to escape as the pie bakes.
  • Roll out the pastry you put aside earlier. Cut 8 long strips each about 2.5cm/1⁄2in wide, and two more strips each about 4cm/11⁄2in wide. Cut the wider strips diagonally to make eight diamond leaf shapes. Mark the veins of the leaves with the tip of a sharp knife. Brush the pastry lid with beaten egg, then lay the 8 thin strips on top, as in the picture. Brush again with egg and arrange the leaves in the centre, between the strips. Brush with egg.
  • Chill the pie for 15 mins, if you have time, to set the pastry. (Can be made a day ahead up to this point. Keep chilled and add 4-5 extra minutes at baking time.) Bake for 30 - 35 miutes until the pastry is crisp, puffed up and deep golden brown.).

CHICKEN, LEEK AND SWEET POTATO ONE POT

Chicken, Leek and Sweet Potato One Pot image

I picked this recipe up in a family circle booklet. The best thing I like about this recipe is that it is all cooked in one pot. I often throw in peas or beans towards the end of cooking so it is a complete meal. I have also cooked this one is a crockpot by just cutting down of the amount of liquid.

Categories     Sauce     Chicken     Side     Dinner     Leek     Boil

Yield 4 servings

Number Of Ingredients 10

1 1/2 cups chicken stock
2 tablespoons unsalted butter
1/4 cup golden raisins, a couple of handfuls, chopped
1 1/2 cups plain couscous
2 tablespoons EVOO (extra-virgin olive oil), twice around the pan
1 1/2 pounds chicken tenders, cut into large bite-size pieces
Salt and black pepper
2 medium leeks or 1 large leek
1 cup dry white wine (eyeball it), about 1/4 bottle
A handful of fresh flat-leaf parsley, chopped

Steps:

  • Heat the chicken stock and 1 tablespoon of the butter in a medium pot with a tight-fitting lid. When the liquid boils, add the raisins and couscous. Take the pan off the heat. Stir the couscous and place the lid on the pot. Let it stand.
  • Heat a large nonstick skillet over medium-high heat and add the EVOO. Add the chicken in a single layer and season it with salt and pepper. While the chicken browns on all sides, trim the rough tops and the root ends off the leeks.
  • Cut the leeks in half lengthwise, then cut them into 1-inch half moons. Place the leeks in a colander and run them under cold water. Separate the layers to release the dirt and grit. Rinse well, then drain well.
  • Add the leeks to the chicken and wilt, 2 to 3 minutes. Add the wine and let it cook down by half, 3 to 4 minutes. The leeks should still have some color but should be tender and the chicken should be cooked through. Add the remaining tablespoon of butter and swirl into the sauce.
  • Fluff the couscous with a fork and stir in the parsley. Place a bed of couscous on each dinner plate and top it with the chicken and leeks.

Time 1h25m

Number Of Ingredients 10

4 skinless chicken breasts, cut into 1" cubes
1 Tbsp olive oil
1 tsp salt
1 tsp dried thyme leaves
1 cup low-sodium chicken stock
1 lb fresh leeks, chopped
2 clove garlic, minced
1 lb broccoli florets, cut into bite-size pieces
1/2 cup breadcrumbs (french or panko breadcrumbs recommended)
2 oz whisky (optional)

Steps:

  • 1. Preheat oven to 325°F. Lightly coat a 9x13-inch baking dish with nonstick spray; set aside.
  • 2. Heat the oil in a large skillet and add chicken. Season with salt and thyme, and cook 3 to 4 minutes (just enough to lightly sear the chicken - it will cook further in a later step).
  • 3. In a saucepan over medium heat, bring chicken stock to a light boil. Add leeks, garlic and broccoli, reduce heat to medium-low, and cook for 5 minutes.
  • 4. Transfer mixture to the prepared baking dish, stirring in the cooked chicken and whisky (if using). Sprinkle the breadcrumbs on top.
  • 5. Cover the dish with foil, and bake for 1 hour. Remove foil, turn heat to broil, and leave baking dish in oven for about 4 or 5 minutes more, just enough to brown the chicken and vegetable tips.

Tips:

  • Choose the right chicken: For the best flavor, use a free-range or organic chicken. Avoid using a chicken that has been treated with hormones or antibiotics.
  • Use fresh leeks: Fresh leeks are essential for this recipe. Avoid using leeks that are wilted or have yellowed leaves.
  • Trim the leeks properly: When trimming the leeks, remove the tough outer leaves and the root end. Cut the leeks into thin slices.
  • Cook the leeks slowly: Cooking the leeks slowly over low heat will help to bring out their sweetness.
  • Don't crowd the chicken: When browning the chicken, don't crowd the pieces in the pan. This will prevent them from cooking evenly.
  • Use a good quality white wine: A good quality white wine will add depth of flavor to the sauce.
  • Let the chicken rest before serving: Let the chicken rest for a few minutes before serving. This will allow the juices to redistribute throughout the meat.

Conclusion:

Chicken and leek is a classic dish that is both delicious and easy to make. By following these tips, you can create a dish that is sure to impress your friends and family. The combination of tender chicken, flavorful leeks, and creamy sauce is sure to be a hit. So next time you're looking for a simple but elegant dish, give chicken and leek a try.
