Kosher salt
One 9-ounce package small cheese ravioli
2 tablespoons extra-virgin olive oil, plus more for drizzling
1 1/4 pounds skinless, boneless chicken breasts, cut into chunks
Freshly ground pepper
8 ounces white mushrooms, halved
1 cup halved cherry tomatoes
2 cloves garlic, thinly sliced
2 tablespoons red wine vinegar
1/3 cup low-sodium chicken broth
2 tablespoons grated Parmesan cheese
1/4 cup chopped fresh parsley, basil or a combination

Steps:

  • Bring a pot of salted water to a boil. Add the ravioli and cook as the label directs; drain, then drizzle with olive oil and toss.
  • Meanwhile, season the chicken with salt and pepper. Heat 1 tablespoon olive oil in a large nonstick skillet over medium-high heat. Add the chicken; cook, undisturbed, until beginning to brown, about 2 minutes. Continue to cook, stirring, 1 more minute. Transfer to a plate.
  • Heat the remaining 1 tablespoon olive oil in the skillet. Add the mushrooms and cook, undisturbed, until browned in spots, about 2 minutes. Season with salt and continue to cook, stirring, until softened, about 3 more minutes. Stir in the tomatoes, garlic and vinegar and cook until the tomatoes begin to soften, about 2 minutes. Time 30m

Yield 4 servings

Number Of Ingredients 13

Kosher salt
2 tablespoons extra-virgin olive oil
1 11-ounce package fully cooked Italian-flavored chicken sausages, sliced on an angle about 1/2 inch thick
1 small onion, chopped
Freshly ground pepper
1 cup cherry tomatoes
3 cloves garlic, chopped
4 cups refrigerated mozzarella ravioli (from a 20-ounce package)
1 tablespoon unsalted butter
3 cups baby kale
2 tablespoons Parmesan cheese, plus more for serving
1/2 cup torn fresh basil
2 tablespoons roughly chopped fresh parsley

KALE-AND-RICOTTA RAVIOLI

Kale-and-Ricotta Ravioli image

Kids may be skeptical of this leafy green -- but not when it's mixed into a creamy ravioli filling. Kale adds vitamin C and antioxidants to this surprisingly easy dish.

Provided by Martha Stewart

Categories     Food & Cooking     Healthy Recipes     Vegetarian Recipes

Time 45m

Number Of Ingredients 7

Coarse salt and ground pepper
1 bunch kale (3/4 pound), tough stems and ribs removed
1 3/4 cups ricotta
1/3 cup grated Parmesan
1 garlic clove, minced
48 square wonton wrappers (from a 12-ounce package)
4 cups marinara sauce, warmed

Steps:

  • In a large pot of boiling salted water, cook kale until tender, 4 minutes. With a slotted spoon, transfer kale to a colander. When cool enough to handle, squeeze out excess water and finely chop. In a medium bowl, mash together kale, ricotta, Parmesan, and garlic; season with salt and pepper.
  • Assemble ravioli: Arrange 6 wrappers on a work surface, keeping remaining wrappers covered with a damp towel. Spoon a scant tablespoon kale mixture in center of each wrapper. With a fingertip, moisten edges of wrapper with water, then fold over filling to form a triangle and press to seal (flatten area around filling to eliminate air pockets). Place ravioli on a parchment-lined baking sheet and cover with a kitchen towel. Repeat with remaining wrappers and filling.
  • Return salted water to a boil; reduce to a bare simmer. Drop half the ravioli into water, one at a time, stirring gently to prevent sticking. Cook until al dente, about 3 minutes. With a slotted spoon, transfer ravioli to a paper-towel-lined baking sheet, arrange in a single layer, and let drain briefly. Repeat with remaining ravioli. Serve topped with sauce.

Time 35m

Yield 4

Number Of Ingredients 10

2 (8 ounce) boneless, skinless chicken breasts
salt and freshly ground black pepper
1 sweet potato
2 tablespoons sesame oil
1 bunch chopped kale
4 each mini bell peppers, halved lengthwise and seeded
½ medium red onion, cut into bite-size pieces
½ zucchini, sliced
3 cloves garlic, chopped
2 tablespoons peanut sauce

Steps:

  • Lightly season chicken breasts on both sides with salt and pepper.
  • Heat a cast iron skillet over medium heat and pan-fry chicken until it is no longer pink in the center and the juices run clear, turning occasionally, about 10 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove from skillet, allow to cool, and cut into bite-sized pieces.
  • Meanwhile, pierce sweet potato with a fork a few times and microwave until fork-tender, 2 to 3 minutes. Be careful not to overcook. Remove and allow to cool; then cut into bite-sized pieces.
  • Heat oil in a wok, Dutch oven, or heavy skillet over medium heat. Add kale, season with salt and pepper, and cook until wilted, 3 to 5 minutes. Add sweet potato, mini peppers, onion, zucchini, and garlic. Stir-fry for 3 to 5 minutes. Add chicken and peanut sauce. Stir all ingredients together until well combined. Tips:

  • To make the perfect ravioli dough, use a food processor to combine the flour and salt. Then, add the eggs and olive oil and pulse until the dough just comes together. Knead the dough on a lightly floured surface for a few minutes until it is smooth and elastic. Wrap the dough in plastic wrap and let it rest for at least 30 minutes before rolling it out.
  • When making the filling, be sure to chop the chicken and kale very finely. This will help to ensure that the filling is evenly distributed throughout the ravioli.
  • To make the sauce, melt the butter in a large saucepan over medium heat. Add the onion and garlic and cook until softened. Stir in the kale and cook until wilted. Add the chicken broth, heavy cream, and Parmesan cheese and bring to a simmer. Season with salt and pepper to taste.
  • To assemble the ravioli, divide the dough into 4 equal pieces. Roll out each piece of dough into a thin sheet. Place a heaping tablespoon of filling in the center of each sheet of dough. Fold the dough over the filling to form a triangle. Pinch the edges of the dough together to seal the ravioli.
  • Bring a large pot of salted water to a boil. Add the ravioli and cook for 3-4 minutes, or until they float to the top. Remove the ravioli from the pot with a slotted spoon and place them in a serving dish.
  • To serve, ladle the sauce over the ravioli. Garnish with grated Parmesan cheese and chopped parsley.
