SKILLET HASH AND EGGS

Provided by Food Network Kitchen

Time 40m

Yield 4 servings

Number Of Ingredients 9

3 russet or Yukon gold potatoes (about 1 1/4 to 1 1/2 pounds)
2 tablespoons unsalted butter
1/2 pound kielbasa, cut into 1/2-inch pieces (about 2 cups)
1 large sweet onion, chopped
1/2 teaspoon caraway seeds or dill seed
8 large eggs
Kosher salt and freshly ground pepper
2 tablespoons chopped fresh parsley
2 scallions, sliced

Steps:

  • Preheat the oven to 400 degrees F. Pierce the potatoes in a few places with a fork and microwave until almost tender, about 10 minutes, turning halfway through. Let cool slightly, then peel and cut into 1/2-inch dice.
  • Heat the butter in a large cast-iron skillet over medium-high heat. Add the kielbasa and cook, stirring, until it starts to brown, about 3 minutes. Add the onion and caraway seeds and cook until the onion is soft, about 3 minutes.
  • Stir in the potatoes, then flatten the hash into an even layer, pressing gently with a spatula. Cook undisturbed until crunchy and browned on the bottom, about 5 minutes. Flip the hash in sections and cook until browned on the other side, about 5 more minutes. Remove from the heat.
  • Using a spoon, make 4 shallow indentations in the hash and crack 2 eggs into each. Transfer to the oven and bake until the egg whites set, about 10 minutes. Season with salt and pepper and top with the parsley and scallions.

BASIL CHICKEN HASH

Categories     main-dish

Time 1h55m

Yield 4 servings

Number Of Ingredients 15

2 whole (4 split) chicken breasts, bone-in, skin-on
16 basil leaves
Olive Oil
Kosher salt and freshly ground black pepper
6 tablespoons unsalted butter, divided
2 pounds boiling potatoes, peeled and large diced
2 red onions, chopped
2 red bell peppers, large diced
3 garlic cloves, minced
2 teaspoons fresh thyme leaves
1 teaspoon paprika
1 tablespoon tomato paste
4 minced scallions, white and green parts
1/4 cup chopped fresh leaf parsley
Sour cream, Cheddar and sliced lemons, for serving

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the chicken breasts on a baking sheet. Loosen the skin from the meat with your fingers, leaving one side attached. Place 4 basil leaves under the skin of each chicken breast. Pull the skin over as much of the meat as possible so the chicken won't dry out. With your hands, rub each piece with olive oil and sprinkle very generously with salt and pepper. Bake the chicken for 35 to 40 minutes, until the skin is lightly browned and the chicken is just cooked through. Set aside until cool enough to handle, then remove the meat from the bones. Cut the chicken in large dice pieces and set aside.
  • Melt 4 tablespoons of the butter in a large saute pan. Add the potatoes and onions, 1 teaspoon salt and 1/2 teaspoon pepper and saute over medium heat for about 10 minutes, until evenly browned and cooked through.
  • In a separate saute pan, melt the remaining 2 tablespoons of butter. Add the red peppers, garlic, thyme, paprika, tomato paste, 1 teaspoon salt and 1/2 teaspoon pepper and saute over medium heat for about 5 minutes, until the edges of the peppers are seared.
  • Add the chicken and the pepper mixture to the potatoes and heat through. Add the scallions and parsley, toss together and place on a serving platter.
  • Serve with sour cream, Cheddar and sliced lemons.

CHICKEN, BACON & EGG HASH

Chicken, Bacon & Egg Hash image

This recipe is my "clean out the freezer" meal that uses up cooked chicken, bacon and veggies. I will make up extra seasoned baby potatoes for the grill and use the leftovers for this dish. To simplify this even more you could use hash browns. Frozen mixed vegetables could be used instead of the peas and corn

Provided by Abby Girl

Categories     One Dish Meal

Time 35m

Yield 4 serving(s)

Number Of Ingredients 10

4 slices bacon, diced
1 tablespoon vegetable oil
1 onion, diced
2 cups cooked chicken, diced
1 1/2 cups potatoes (cooked and diced, or use hash browns)
1/2 cup baby peas, frozen
1/2 cup corn, frozen
1 tablespoon parsley, chopped
2 tablespoons butter
4 eggs

Steps:

  • In a large skillet, cook bacon until crisp, 5 - 6 minutes. Pour off all but 2 T of the fat.
  • Add onions and garlic to the skillet and cook stirring occasionally for 2 minutes. Add chicken and potatoes and cook until heated through.
  • Stir in peas and corn, cooking for 5 minutes.

Tips:

  • Mise en Place: Before you start cooking, make sure you have all of your ingredients and equipment ready to go. This will help you stay organized and avoid scrambling (pun intended!) later on.
  • Use Fresh Ingredients: The fresher your ingredients, the better your hash will taste. If possible, use organic, free-range eggs and chicken. Fresh vegetables will also make a big difference in the flavor of your dish.
  • Season Generously: Don't be afraid to season your hash with plenty of salt and pepper. You can also add other spices, such as garlic powder, onion powder, paprika, or cayenne pepper, to taste.
  • Cook the Hash Over Medium Heat: This will help to prevent the eggs from overcooking and becoming rubbery. You want the eggs to be cooked through, but still slightly soft and runny.
  • Don't Overcrowd the Pan: If you overcrowd the pan, the eggs will not cook evenly and the hash will be mushy. Cook the hash in batches if necessary.
  • Serve Immediately: Hash is best served hot and fresh. Top with your favorite toppings, such as salsa, avocado, sour cream, or cheese.

Conclusion:

Chicken and egg hash is a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. It's a great way to use up leftover chicken and eggs, and it's also a budget-friendly meal. With so many variations to choose from, there's sure to be a chicken and egg hash recipe that everyone will love. So next time you're looking for a quick and easy meal, give chicken and egg hash a try. You won't be disappointed!
