- Place chicken in a large saucepan full of lightly salted water. Bring to a boil; boil for about 30 minutes, or until chicken is cooked through (juices run clear). Remove chicken from pan, reserving broth. Cut chicken into bite size pieces and place in bottom of a 9x13 inch baking dish.
- Preheat oven to 350 degrees F (175 degrees C).
- In a medium bowl mix together cream of chicken soup and cream of celery soup. Fill one empty soup can with milk, and mix milk with soups. Pour mixture over chicken. In a small bowl combine stuffing and broth; mix together and spoon mixture over casserole.
- Bake in the preheated oven for 45 minutes.

- 1. Place fryers, whole onion, carrot and salt in a large kettle. Pour in 2 quarts water, cook until fryers are tender. Remove fryers from broth cool. Reserve broth.
- 2. Remove skins and bones from chicken, cut chicken into bite size pieces.
- 3. Melt butter in frypan. Add minced onion, and celery saute until transparent.
- 4. Break bread into small pieces, add sauteed vegetables and poultry seasoning. Add enough reserved broth to moisten.
- 5. Mix soup and milk until smooth. Place bread mixture in greased casserole pour in half the soup mixture.
- 6. Arrange chicken over soup mixture add remaining soup mixture. cover with bread crumbs
- 7. Bake in a preheated 375 degree oven for 30 minutes.

- 1. Place chicken breasts, broth, garlic, and onion in a skillet and bring just to a boil over medium high heat. Turn heat down to medium, cover and simmer until chicken is no longer pink - about 15-20 minutes.
- 2. Remove chicken from skillet, and shred with a fork and set aside. Reserve the broth (this should equal 1 cup, but if it doesn't, add enough canned broth to equal a cup).
- 3. Melt butter and pour over stuffing mix in a bowl and whisk with a fork to blend. Spread 1/2 of the stuffing/butter mixture in the bottom of a 9x13 inch baking dish.
- 4. Meanwhile, blend the soup, sour cream and reserved broth together with a wire whisk. Place shredded chicken over the layer of stuffing in baking dish. If using broccoli, spread it over the chicken. Pour soup mixture over broccoli and chicken, then top with the remaining stuffing. Bake casserole in a 350 degree oven for 30 minutes, or until hot and bubbly. Serve and enjoy!!!!!
HAZEL SMITH'S CHICKEN DRESSING CASSEROLE
Steps:
- Place whole chicken in deep pot. Add water to cover. Bring to a boil, reduce heat to a simmer and cook until 'fork tender', about 2 1/2 hours.
- Hold chicken in broth until completely cooled. Remove chicken from broth, reserving broth. Remove meat from bones and chop, discarding skin. Set aside.
- Preheat oven to 350 degrees F.
- In a large bowl, crumble cornbread and toast (or biscuits). Add chopped hard-boiled eggs to mixture.
- In a large skillet, saute onions and celery in butter until translucent. Add to bread mixture.
- In a separate small bowl, combine beaten eggs, dried sage, salt, pepper, and vinegar. Stir into bread mixture.
- Add enough chicken broth to create a moist consistency.
- Grease a 9 1/2-inch by 13-inch glass baking dish with butter. Evenly spread 1 cup dressing mixture in the bottom of the dish. Add a layer of chicken. Top with remainder of dressing. Bake until browned and bubbly, about 40 minutes. Remove from oven and let cool for 10 minutes.
- Place a portion of the chicken dressing casserole on each plate. Ladle the Giblet Gravy over the dressing. Serve with chutney, hot mashed potatoes and green beans.
- Preheat oven to 450 degrees F.
- Heat a cast iron skillet in the oven with 1/3 cup shortening to melt. When shortening is melted, remove skillet from oven.
- Combine cornmeal and buttermilk in a medium bowl. Add melted shortening to batter, stirring quickly. Pour batter into hot pan. Bake for 20 to 25 minutes.
- Let cool and then crumble.
- Boil liver, gizzards, and heart in a large pot of simmering water for 40 to 50 minutes or until tender. Drain, chop, and reserve giblets.
- Melt shortening in a frying pan over medium heat. Add flour, stirring until light brown, about the color of peanut butter, about 5 minutes. Add chicken broth and stir. Add salt and pepper to taste. Add giblets and boiled eggs and stir to combine. Serve immediately or keep warm.
- Combine all ingredients in a medium bowl. Chill until ready to serve.
