1 (8 ounce) container fat-free sour cream
1 (4.5 ounce) can chopped green chilies
½ cup low-fat milk
2 ½ cups cooked, shredded chicken breast meat
8 (6 inch) yellow corn tortillas, torn into bite-size pieces
1 teaspoon taco seasoning mix, or more to taste
1 large tomato, chopped
1 ½ cups shredded Mexican-style cheese blend, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  • Stir condensed soup, sour cream, green chilies, and milk together in a large bowl. Add chicken, tortilla pieces, and taco seasoning; stir. Mix tomato and 1 cup Mexican-style cheese blend into chicken mixture.

4 cups cooked and shredded chicken
8 oz cream cheese (at room temp)
1/2 cup mayo
2 cups Monterey Jack cheese (shredded)
1 can corn (drained)
2 jalapeno peppers (diced, no seeds or ribs)
1 poblano pepper (diced, no seeds or ribs)
kosher salt, pepper, season salt
3/4 cup panko bread crumbs
1 Tbsp melted butter

Steps:

  • In a large bowl combine cooked, shredded chicken, softened cream cheese, and mayo. Stir until evenly mixed. Add cheese, corn, peppers, kosher salt, pepper, and season salt (save some peppers to put on top of the casserole if desired). Stir until evenly mixed.
  • Put the mixture into a casserole dish. In a small bowl mix the panko bread with the melted butter and then place on top of the chicken mixture (and reserved diced peppers if desired).
  • Bake in a 400 degree oven for 20-25 minutes.

2 cups rotini noodles
1 1/2 cups diced cooked chicken breasts
1 teaspoon butter
1/2 cup onion, chopped
1 cup celery, chopped
1 (10 ounce) can cream of mushroom soup
1/2 cup skim milk
1 3/4 cups light cheddar cheese, grated, divide into 1 cup and 3/4 cup
1 teaspoon ground pepper

Steps:

  • Oven at 375f.
  • Cook noodles as per package directions. Drain and set aside.
  • In a small saucpan, melt butter and sautee onions and celery, until onions are tender. Add cream of mushroom soup and milk.
  • Stir until bubbling. Add one cup of grated cheese and pepper. Stir until melted.
