CRISPY CHICKEN-AND-BROCCOLI SALAD
You will never again have trouble getting your family to eat broccoli once you serve them this main dish salad. A satisfying meal that is simple to make, preparing this quick summer salad recipe allows you more family time and less time in the kitchen prepping and cooking. There are so many tastes and textures going on in this salad. It is slightly creamy, tangy, and crunchy - there's something in there that will please everyone. The addition of fresh grapes might seem odd if you've never lived in the South, but they are a traditional part of broccoli salad and add a fresh crunch and a little sweetness. Add the chicken after the salad has a chance to marinate so it stays crispy. Purchase fried chicken tenders from the deli section of your supermarket or you can pick some up from your favorite fast food chain. This recipe makes an ideal addition to the menu for an outdoor picnic, barbecue, church potluck or even the Thanksgiving table. Do you like to play with your food? Use the fried chicken and broccoli combination as a base and switch up your other fillings. Add cranberries, toasted pecans or almonds, halved cherry tomatoes, diced apples, shallots instead of red onion, or a number of other ingredients. This salad just gets better the longer it sits, which means leftovers are fantastic. Before the family eats it all, package some up for your lunch the next day. You need to let this salad chill before adding the chicken, which makes this a great make-ahead recipe. If you need to take a dish to party, try this recipe; simply wait until you arrive before adding in the chicken.

Steps:
- Cook the pasta according to the package directions, NOT al dente. You don't want it to be too gummy or too mushy. Drain in a colander and run COLD water over until it's completely cold. Transfer to a large bowl.
- Sprinkle the chicken breasts with lemon pepper. "Grill" the chicken breasts by whatever method you prefer. You may use a panini type grill, a barbecue grill, or simply bake in the oven. Your cooking times will vary based on your method, but just make sure the breasts are fully cooked by reaching an internal temperature of 165 degrees, or when the juices run clear. Allow the chicken pieces to cool until you can handle them. Slice the chicken thinly, then cut slices in half so they are bite-sized. Spread out to cool completely while you prepare the remaining ingredients.
- Pour the dressing ingredients (mayo, oil, vinegar, sugar, salt, pepper) into the bowl and whisk until incorporated.
- After the chicken and pasta are completely cooled, add all the remaining ingredients to the bowl and stir gently. Refrigerate until ready to serve.
- TIPS: If the salad is too stiff after prolonged refrigeration, you can make it creamy again by stirring in a tiny bit of olive oil, milk or warm water. Gorgonzola cheese is similar to bleu cheese, but slightly milder. It is an acquired taste for some people, so feel free to use more or less to taste. I use MORE! For best results, don't substitute or omit ingredients. I usually try doing things to lower fat or calories, but in this case, the results will NOT be the same.
CHICKEN SALAD WITH BROCCOLI
This main dish salad looks very attractive and tastes even better. Simple, readily available ingredients that are more than the sum of their parts. Easy to make but there is a trick. The broccoli must be green and crisp for the recipe to WOW. Fresh dill can certainly be used but I rarely have it on hand as I do dried dill.

Tips:
- Choose the right chicken: For best results, use boneless, skinless chicken breasts or thighs. If using breasts, slice them thinly against the grain for more tender results.
- Cook the chicken properly: Make sure the chicken is cooked through before adding it to the salad. You can boil, grill, bake, or pan-fry the chicken, depending on your preference.
- Use fresh, crisp broccoli: Choose broccoli florets that are deep green in color and have tight heads. Avoid florets that are yellowing or have brown spots.
- Make the dressing ahead of time: The gorgonzola dressing can be made up to 2 days in advance. This will allow the flavors to meld and develop.
- Serve the salad immediately: This salad is best enjoyed fresh. If you need to make it ahead of time, store the chicken, broccoli, and dressing separately and assemble just before serving.
Conclusion:
Chicken and broccoli salad with gorgonzola dressing is a delicious, healthy, and easy-to-make dish. It's perfect for a light lunch or dinner, and it's also a great way to use up leftover chicken. With its tender chicken, crisp broccoli, and creamy gorgonzola dressing, this salad is sure to be a hit with everyone who tries it.
