DIJON-BAKED CHICKEN WITH RICE AND BROCCOLI
If you forget to marinate this overnight, don't worry; it's still great if you cook the chicken in the sauce as soon as you make it. It's just better when it marinates.

Steps:
- The night before: Unravel thighs to flatten and scrunch together in a large shallow oven-safe pan. Combine the following in a small mixing bowl in this order: spices, honey, Dijon mustard, soy sauce, and hot chili sauce. Stir. Pour evenly over chicken. Flip the chicken around with a fork until each piece is well coated. End by making sure the rough side of the thigh is down. Cover with plastic wrap and refrigerate overnight.
- The next day: Preheat oven to 350 degrees F.
- Combine rice and water in a larger oven-safe pot. Stir. Cover and place in preheated oven.
- Turn chicken over with a fork. Place in preheated oven, beside rice. Set timer for 50 minutes. About halfway through the cooking time for chicken, I like to flip the chicken over again. When the timer rings for chicken, turn off heat but leave it in the oven.
- Rinse broccoli in colander. Place in a microwave-safe pot or casserole dish with lid. Cover, then microwave at high for 5 minutes. When timer rings, add seasoning mix to broccoli.

Steps:
- In a large pot, cook noodles as directed, adding broccoli to water during last 4 minutes of cook time.
- Drain noodles and broccoli.
- Coat large skillet with cooking spray.
- Over med-high heat, cook and stir chicken 5 minutes or until browned.
- In a small bowl, combine water, mustard, flour, lemon juice and bouillon; mix well.
- Add to skillet; cook and stir until thick and bubbly.
- Stir in sour cream, noodles and broccoli; heat through, do not boil!
Tips:
- Prep your ingredients in advance: Dicing the chicken, chopping the vegetables, and measuring out the sauce ingredients ahead of time will make the cooking process go much smoother and quicker.
- Use a large skillet or wok: This will ensure that you have enough space to cook all of the ingredients without overcrowding the pan.
- Cook the chicken in batches if necessary: If your skillet is not large enough to cook all of the chicken at once, cook it in batches. Remove the cooked chicken from the pan and set aside before cooking the remaining chicken.
- Don't overcrowd the pan: When cooking the vegetables, don't overcrowd the pan. This will prevent them from cooking evenly and becoming soggy.
- Use a flavorful sauce: The sauce is what really brings this dish together, so make sure to use a flavorful sauce that you enjoy. The recipe included in this article provides a delicious Dijon sauce, but you can also use your favorite store-bought sauce or create your own.
- Serve immediately: This dish is best served immediately after it is cooked. The noodles will start to absorb the sauce and become soggy if they sit for too long.
Conclusion:
This chicken and broccoli noodles with Dijon sauce is a quick, easy, and delicious meal that is perfect for a busy weeknight. The combination of tender chicken, crisp-tender vegetables, and flavorful sauce is sure to please everyone at the table. So next time you're looking for a quick and easy meal, give this recipe a try!
