1 tablespoon margarine
3 tablespoons all-purpose flour
2 ½ cups milk
1 cup chicken broth
2 (12 ounce) cans whole kernel corn
2 ½ tablespoons cream cheese
1 teaspoon garlic salt
1 teaspoon ground black pepper
ground cayenne pepper to taste

Steps:

  • In a large pot over medium heat, combine the onion, garlic, parsley and butter or margarine. Saute for about 5 minutes, or until onions are tender.
  • Add the flour, stirring well, to make a pasty mixture. Whisk in the milk and the broth. Add the corn and the cream cheese and allow to heat through. Add the garlic salt, black pepper and cayenne pepper to taste. Stir together and serve.

2 celery ribs, chopped
1 cup shredded carrots
2 pounds boneless skinless chicken breasts, cubed
3 chicken bouillon cubes

2 cans (14-3/4 ounces each) cream-style corn
1/4 cup butter

Steps:

  • Place first 8 ingredients in a Dutch oven; bring slowly to a boil. Reduce heat; simmer, uncovered, until chicken is no longer pink and vegetables are tender, about 30 minutes. , Stir in noodles, corn and butter. 1 (4 pound) chicken
1 onion, chopped
4 quarts water
1 (10 ounce) package frozen whole kernel corn
½ cup chopped celery
salt and pepper to taste
1 cup all-purpose flour
1 pinch salt
1 egg
¼ cup milk
2 hard-cooked eggs, chopped

Steps:

  • In a large stock pot cover chicken and onion with water. Cook slowly until tender, approximately 1 hour. Remove chicken, let cool and remove meat from bones. Cut meat into 1 inch pieces, discard skin and bones.
  • Cut corn from cobs if using fresh corn.
  • Add corn, cut up chicken, celery to stock pot and season with salt and pepper. Simmer soup for 10 minutes.
  • In a separate bowl make rivels by mixing together flour, salt, egg, and enough milk to form small crumbs.
  • Drop rivels into soup and add hard boiled eggs. Simmer for 15 minutes and serve hot.

1 lb boneless skinless chicken breast, cut into cubes
1 tablespoon olive oil
1 teaspoon curry powder
2 tablespoons white wine
1/2 red pepper, diced
1/2 green pepper, diced
1/2 yellow pepper, diced
1 small onion, diced
2 cloves garlic, crushed
3 tablespoons curry paste (Patak's is very good)
3 teaspoons sultanas
1 teaspoon red pepper powder
1 (14 ounce) can coconut milk
14 ounces canned or cooked baby corn, cut into 1 inch pieces
3 tablespoons instant potato flakes

Steps:

  • Coat chicken with curry powder.
  • Heat oil in wok or deep frying pan, add chicken and brown.
  • Remove chicken and set aside.
  • Keeping juices in pan add wine, peppers and onion, saute until almost tender,add garlic and simmer 3 minutes.
  • Stir in saltanas, red pepper powder and curry paste and cook 2-3 minutes.
  • Add chicken, coconut milk and baby corn, bring to boil (stir when needed) then simmer for 7-8 minutes.
  • Sprinkle in potatoe flakes and stir to thicken,simmer for 5 minites then serve.

1 onion, chopped

2 tablespoons canola oil
5 scallions, thinly sliced
1 red bell pepper, chopped
2 garlic cloves, crushed
4 1/2 ounces baby corn, sliced (canned)
7 ounces corn kernels (canned)
4 cups chicken broth
2 tablespoons dry sherry
2 teaspoons cornstarch
1 teaspoon hot sauce, such as Cholula
1/4 teaspoon saffron
2 tomatoes, diced
2 tablespoons cilantro, finely chopped

Steps:

  • Clean chicken breast, then cut lengthwise into four strips. Thinly slice strips across the grain.
