1 medium ripe avocado, peeled and cubed
2 tablespoons lemon juice, divided
2 cups cubed cooked chicken
2 cups seedless red grapes, halved
1 medium tart apple, chopped
1 cup chopped celery
3/4 cup mayonnaise
1/2 cup chopped walnuts, toasted
1/2 teaspoon ground ginger
Lettuce leaves, optional

Steps:

  • In a small bowl, toss avocado with 1 tablespoon lemon juice; set aside. In a large bowl, combine the chicken, grapes, apple, celery, mayonnaise, walnuts, ginger and remaining lemon juice. Stir in avocado. Serve on lettuce-lined plates if desired.

1 10-ounce box couscous (about 1 1/4 cups)
2 teaspoons herbes de Provence or Italian seasoning
2 cups red or green seedless grapes, halved
1/4 cup extra-virgin olive oil
Kosher salt and freshly ground pepper

1 4-pound chicken, cut into 12 pieces
1 medium red onion, cut into wedges

Steps:

  • Position a rack in the upper third of the oven and preheat to 450 degrees F. Cook the couscous as the label directs, omitting any oil or butter. Fluff with a fork and toss with 2 tablespoons olive oil, and salt and pepper to taste. Cover and keep warm. Meanwhile, put the chicken and onion on a rimmed baking sheet and toss with the remaining 2 tablespoons olive oil, the herbes de Provence, 1 1/2 teaspoons salt and 1/2 teaspoon pepper. Arrange the chicken skin-side up and roast until the chicken begins to brown, about 15 minutes. Remove the baking sheet from the oven and scatter the grapes on top. Continue roasting until the chicken is golden brown and the grapes are soft, 15 to 20 more minutes. Divide the chicken, onion and grapes among plates and drizzle with the pan drippings. Serve with the couscous.

This is a delicious and very easy recipe for a dinner or lunch party, served with a crisp green tossed salad and a glass of your favourite white wine! I make this dish during both winter AND summer, and has proved very popular amongst many of our friends! I have not included the time it takes to make the crepes in the Preparation time given, though they don't take VERY long to make.

Number Of Ingredients 16

125 g plain flour
1 pinch salt
2 eggs
1 1/4 cups milk
3 teaspoons melted butter
300 -400 g diced cooked chicken
2 avocados, ripe but firm
60 g butter
1/3 cup plain flour
1 cup milk
1 cup light sour cream (or real cream if you're not too concerned about the calories!!)
2 tablespoons lemon juice
125 g grated romano cheese
1 pinch nutmeg
salt
fresh ground black pepper

Steps:

  • Combine the CREPE ingredients together and make the crepes in the usual way.
  • Recipe should make 10-12 crepes.
  • Peel the avocados, remove the stones and cut into cubes.
  • Drizzle with lemon juice.
  • Mix together gently, the avocado and diced chicken.
  • Combine the melted butter and flour and make a roux.
  • Remove from the heat and stir in a little of the milk AND cream.
  • Return to the heat and blend until smooth.
  • Repeat this process several times until all the cream is smoothly blended into the roux to make a thick and smooth white sauce.
  • Stir in the lemon juice and then the rest of the ingredients. Stir to combine.
  • Pour 1/2 the sauce over the chicken and avocado, and stir to combine.
  • Lie the crepes out flat and divide the chicken and avocado mixture/filling evenly among the crepes.
  • Spread the filling along one edge of each crepe.
  • Roll each crepe up and place firmly side by side in lightly greased baking dish.
  • It is at this stage that the crepes and sauce can be covered and refrigerated for a couple of hours until ready to serve.
  • Then reheat the sauce over moderate heat and thin down with a little extra cream or milk if too thick.
  • Serve the crepes with the sauce poured over the top.
  • Garnish with chopped fresh chives and a sprig of parsley.
  • Enjoy!

1 pound chicken cutlets
1 teaspoon ground coriander
1 bunch flat leaf spinach
1 cup seedless organic red grapes, halved
1/2 medium shallot, thinly sliced
1/4 cup sliced almonds, toasted
2 ears corn, shucked and removed from cob
1 avocado, halved and thinly sliced

Steps:

  • In a large bowl, whisk together 3 tablespoons oil, vinegar, and Dijon; season with salt and pepper. Set aside.
  • In a large nonstick skillet, heat remaining tablespoon oil over medium. Sprinkle chicken with coriander; season with salt and pepper. 4 whole chicken breasts
Flour

6 tablespoons vegetable oil
2 medium onions, chopped
2 cloves garlic, minced
1 green pepper, chopped
1 cup tomato sauce or puree
1/2 cup raisins
1 cup dry white wine
1 1/2 cups green grapes
2 medium, ripe avocados
Cinnamon

Steps:

  • Dredge chicken in flour that has been seasoned with salt and pepper.
  • Heat oil in skillet and brown chicken on both sides. Remove; add onion, garlic and green pepper and saute until onion is soft. Return chicken to skillet with tomato, raisins and wine. Reduce heat, cover and cook about 10 minutes, until chicken is tender. If sauce begins to thicken too much, add a little water. Season to taste.
  • If grapes are not seedless, halve and seed.
  • Peel and cut avocados into chunks. Add grapes and avocados to skillet; cover and heat two or three minutes, until avocado and grapes are hot.
