Steps:
- Heat a large Dutch oven over medium-high heat and add the vegetable oil. Add the sausage and cook, stirring occasionally, until browned and much of the fat is rendered. Remove the sausage to plate with a slotted spoon.
- While the sausage browns, pour a good amount of flour into a shallow baking dish, and season with salt and pepper. Dredge the chicken with the flour and add to the Dutch oven, in batches if necessary, and cook until brown on both sides. Remove to the plate with the sausage.
- Add the 1/2 cup flour to the Dutch oven and cook, stirring constantly, until light golden brown. Add the onions, peppers, and celery to the Dutch oven and cook, stirring, about 2 minutes. Stir in the okra and the garlic and cook, stirring, about 2 minutes.
- Strip the leaves from the thyme into the Dutch oven, and stir in the bay leaves, red pepper flakes, and 6 cups broth. Crush the tomatoes through your hands into the pot. Return the chicken and sausage to the pot, bring to a boil, reduce the heat, and simmer, uncovered, 25 to 30 minutes, until the chicken is cooked through. Stir in some additional chicken stock to thin the sauce a bit, if desired.
- Stir in the vinegar, scallions, and parsley, taste, and adjust the seasoning.

Tips:
- Use high-quality ingredients: The better the ingredients, the better the gumbo will be. Choose fresh vegetables, flavorful smoked sausage, and a good-quality chicken stock.
- Don't skimp on the roux: The roux is the base of the gumbo and what gives it its rich, dark color. Cook the roux slowly over medium heat, stirring constantly, until it reaches a chocolate-brown color.
- Add the vegetables in stages: Add the vegetables in stages, starting with the hardest vegetables (such as carrots and celery) and ending with the softest vegetables (such as tomatoes and okra). This will ensure that all of the vegetables are cooked evenly.
- Don't overcrowd the pot: If you overcrowd the pot, the gumbo will be too thick. Add the ingredients in batches, if necessary.
- Season to taste: Season the gumbo to taste with salt, pepper, and cayenne pepper. You can also add other seasonings, such as garlic powder, onion powder, or paprika.
- Serve the gumbo with rice: Gumbo is traditionally served with rice. You can use white rice, brown rice, or even dirty rice.
Conclusion:
Chicken and Andouille Smoked Sausage Gumbo is a delicious and hearty stew that is perfect for a cold night. It is made with a rich, flavorful roux, tender chicken, smoky andouille sausage, and a variety of fresh vegetables. Gumbo is a versatile dish that can be customized to your liking. You can add more vegetables, different types of meat, or even seafood. No matter how you make it, gumbo is sure to be a hit with your family and friends.
