4 large chicken breast fillets (2 breasts halved)
¼ cup all-purpose flour
1 tsp chili powder
½ tsp ground cumin
2 Tbsp olive oil
1 Tbsp butter
salt and pepper
1 ¼ cup Mexican crema (read note 1)
1 cup jalapeno peppers (diced, veins and seeds removed)
1 small onion ( finely chopped )
1 garlic clove (minced)
2 Tbsp olive oil
½ tsp dried oregano
2 Tbsp butter
1 ¼ cup chicken stock
1 Tbsp cilantro or parsley (finely chopped)

Steps:

  • Generously season the chicken breast with with salt, cumin, chili powder and pepper.
  • Place flour on a flat plate and dredge the chicken on all sides, shake off excess.
  • On a sautéing pan, heat 2 tablespoons of olive oil and 1 tablespoon butter over medium-high heat.
  • Fry chicken until they is cooked through and lightly brown-golden on the outside (about 5 minutes each side, depending on the thickness of your chicken).
  • Transfer to a plate and cover with foil to prevent chicken from drying out. Set aside.
  • Reduce heat to medium. Add one tablespoon of oil and sauté jalapeno and onion until softened.
  • Add garlic and sauté until fragrant.
  • Add the chicken stock to deglaze the pan scraping up the bottom to remove any browned bits.
  • Add the oregano and simmer until the sauce is reduced almost to half, stirring from time to time.
  • Reduce heat to low and add the cream, allow to simmer for 2 minutes while stirring occasionally. Adjust with salt and pepper to your taste.
  • Return the chicken back into the pan and let simmer from 2 to 3 minutes more to thicken the sauce a little bit.
  • Garnish with parsley and chili flakes and serve warm.

2 pounds masa harina
2 ounces all-purpose flour
1 liter warm water
12 ounces Refried Beans, recipe follows
Vegetable oil
2 pounds shredded Oaxaca cheese
1/2 ounce ground cumin
1/2 ounce ground garlic
1/2 ounce ground black pepper
2 ounces bitter orange juice seasoning
All-purpose seasoning
12 cactus paddles, spines removed
12 jalapenos
24 to 36 sweet onions, such as Vidalia
6 pounds skirt steak, sliced
5 pounds pinto beans
18 ounces vegetable oil
1 onion (1/2 whole, 1/2 diced)
2 ounces salt
4 ounces chicken bouillon

Steps:

  • Combine the masa harina, all-purpose flour and water in a large bowl and stir until a smooth dough forms. Knead in the bowl until very smooth but not sticky, about 2 minutes.
  • Form the dough into 12 equal portions and push a small hole into each. Insert 1 tablespoon of Refried Beans into each of the holes and seal to cover the filling. Roll into 12-inch oblong shapes.
  • For each huarache: Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add a huarache and cook until blackened in spots, about 3 minutes. Flip and cook on the other side for another 3 minutes; remove from the skillet. Spread 8 ounces of cheese onto the skillet and immediately place the huarache on top of the cheese, lightly pressing down. Flip the huarache (the cheese should stick) and then remove to a plate.
  • Mix together the cumin, ground garlic, black pepper, bitter orange juice seasoning and some all-purpose seasoning in a bowl. Transfer to a salt shaker.
  • Return the skillet to high heat and add 2 tablespoons oil. Season 8 ounces of sliced steak with the spice mixture and add to the skillet. Cook, turning once, until browned on both sides and cooked through, about 6 minutes. Place on top of the huarache.
  • Place a cactus paddle on a cutting board and make shallow incisions into it, stopping just before the core so the paddle remains whole. Heat a tablespoon of oil in the skillet and add the cactus paddle and a jalapeno; cook for about 5 minutes, flipping several times.
  • Meanwhile, deep-fry 2 or 3 onions until tender in the center, about 3 minutes.
  • Serve the huarache topped with the cactus paddle, with the jalapeno and onions on the side.
  • In a large stockpot, add the beans, 12 ounces of the oil, the whole 1/2 onion, salt and 2 gallons water. Bring to a boil, lower the heat and simmer for 2 hours. Once cooked, strain to keep only the beans.
  • Add the remaining 6 ounces oil to a large frying pan over medium-high heat. When the oil is warm, add the diced onions and then the beans. Begin to mash with a potato masher, adding the bouillon as you go and mixing it around evenly. Reduce the heat to low and cook for another 15 minutes, until the moisture is evaporated and the beans are your desired thickness.

This Spicy Chicken dish is a feast for the taste buds. It is easy to prepare and brings a lot of flavor and flair to a weeknight dinner. I did my best to recreate the flavors from one of my favorite dishes from one of my favorite Mexican restaraunts and I think I nailed it. I hope you enjoy this as much as I do.

2 lb boneless, skinless chicken breast (butterflied and flattened thinly with mallet)
1 Tbsp olive oil
10 oz 1 can red enchilada sauce
2 Tbsp chipotle chili powder
1 tsp onion powder
1 tsp cumin
1 tsp garlic powder
4 medium fresh jalapenos, seeded and julienned
1 medium white onion, halved and sliced
2-3 roma tomatoes, diced
salt and pepper to taste

Steps:

  • 1. Butterly and flatten chicken breast, between two pcs. of heavy plastic wrap, about an 1/8" - 1/4" thick.
  • 2. In a medium bowl add the Enchilada sauce, chili powder, onion powder, cumin, and garlic powder. Mix to combine. Add the sauce and chicken pieces to a large Ziplock bag and seal removing as much air as possible.
  • 3. Put chicken in refrigerator and leave for a minimum of 2 hours, or longer.
  • 4. Remove chicken from refrigerator and cut up vegetables.
  • 5. Heat a large iron skillet over med/high heat and add oil. When oil gets a nice sheen, remove chicken from marinade and add directly into hot pan. Reserve Marinade.
  • 6. Cook chicken thouroughly, about 4 minutes per side, and season with salt and pepper.
  • 7. Add vegetables to pan and cook until softened or al dente. If pan becomes to dry, turn down heat and add some of the reserved marinade.
  • 8. Serve Hot chicken with vegetables over top.
  • 9. Serve with all your favorite Mexican Sides such as Guacamole, Pico, Refried Beans, Rice, Cilantro and some Lime wedges.

Sauteed mushrooms and onions are well browed to add extra flavor and give the sauce a beautifully rich color. Spoon this into a bowl alongside rice and top with a dollop of creme fraiche and a sprinkle of cilantro, or wrap it up in a fresh, warm tortilla and dunk it in the sauce--no matter how you serve it, this dish should be on every chicken lover's bucket list.

2 tablespoons olive oil
1 (4.5 pound) whole chicken, quartered
1 yellow onion, roughly chopped
2 cups thickly sliced mushrooms
1 tablespoon kosher salt, or more to taste
1 tablespoon chili powder
¼ teaspoon cayenne pepper
1 teaspoon freshly ground black pepper
2 teaspoons ground cumin
1 teaspoon dried oregano
4 cloves garlic, minced
3 poblano peppers, seeded and thinly sliced
1 (14.5 ounce) can diced tomatoes
4 cups chicken broth
1 large bay leaf
1 ½ cups creme fraiche, divided
2 sprigs fresh oregano, leaves stripped and finely chopped
½ cup chopped cilantro

Steps:

  • Brown chicken in olive oil in a Dutch oven over high heat until nice and dark on both sides and fat has rendered, 6 to 8 minutes per side. Remove chicken to a bowl.
  • Reduce heat to medium and add onion, mushrooms, and salt to the pot. Cook, stirring occasionally, until well browned, 8 to 10 minutes. Add chili powder, cayenne, black pepper, cumin, dried oregano, garlic, and poblano peppers. Cook and stir until peppers begin to soften, about 3 minutes.
  • Add diced tomatoes, chicken broth, and bay leaf; stir and increase heat to high. Stir in 1 cup creme fraiche and fresh oregano and bring to a simmer. Add chicken and any accumulated juices to the pot, nestling them into the broth so they are covered. Reduce heat to low or medium-low to maintain a gentle, steady simmer. Simmer, stirring occasionally, until chicken is cooked through, about 1 hour 15 minutes.
  • Use tongs to carefully transfer chicken to a bowl and let cool enough to handle. Increase heat to medium-high. Cook until braising liquids have reduced by about half, 15 to 20 minutes, skimming off fat from the surface as it cooks.
  • Meanwhile, remove and discard skin and bones from chicken (or save to make stock). Break up the meat into large or small pieces and save any edible drippings.
  • Reduce heat to low and add chicken meat and drippings to the sauce. Simmer until chicken has absorbed the flavor from the sauce, about 15 minutes. Turn off heat and stir in chopped cilantro and remaining creme fraiche. Taste to adjust salt and seasonings.

1 tablespoon chili powder
1 tablespoon garlic powder
1 teaspoon onion powder
1 teaspoon dried oregano
1 teaspoon ground cumin
1 teaspoon ground allspice
1 teaspoon salt
½ teaspoon cayenne pepper
1 ½ pounds uncooked medium shrimp, peeled and deveined
1 tablespoon salted butter, or as needed
⅓ medium white onion, diced
1 clove garlic, minced
5 medium Tomatoes, red, ripe, raw
2 cups chicken stock
½ medium white onion, sliced
1 large green bell pepper, seeded and sliced
2 small jalapeno peppers, seeded and sliced
1 tablespoon chili powder
1 teaspoon ground cumin
1 tablespoon salt
1 teaspoon ground black pepper
1 ½ cups uncooked white rice
1 tablespoon vegetable oil, or as needed
3 cloves garlic, minced
1 medium lime, zested
3 cups water
2 tablespoons lime juice
1 teaspoon salt
⅓ bunch chopped fresh cilantro
2 tablespoons salted butter, or as needed

Steps:

  • Combine chili powder, garlic powder, onion powder, oregano, cumin, allspice, salt, and cayenne pepper in a bowl. Add shrimp and toss to combine with the spices. Set aside for at least 1 hour.
  • Meanwhile, make the sauce. Melt butter in a pot over medium heat and cook diced onion until soft and translucent, about 4 minutes. Add garlic and cook until fragrant, 30 seconds to 1 minute. Add 3 tomatoes and cook until beginning to break down, about 20 minutes.
  • Pour in chicken stock and puree using an immersion blender. Add remaining tomatoes, sliced onion, bell pepper, jalapenos, chili powder, cumin, salt, and pepper. Simmer sauce on medium-low for 45 minutes.
  • Meanwhile, rinse rice in a mesh strainer. Run strainer under a faucet until the water runs clear. Shake the water off and let rice dry for 10 to 15 minutes.
  • Pour a thin layer of vegetable oil in another pot and heat over medium heat. Add rice and lightly fry for 4 to 5 minutes. Add garlic and lime zest and cook for 1 minute. Strain oil out of the rice and return to the pot.
  • Add water, 1 tablespoon lime juice, and salt to the pot. Bring to a boil over medium-high heat; reduce heat to low, cover, and simmer until rice has absorbed most of the liquid, about 20 minutes. Toss with remaining lime juice and cilantro.
  • Melt butter in a separate pot and add shrimp. Saute shrimp until cooked through, 3 to 4 minutes. Remove from heat.
  • Scoop some rice on a plate, ladle tomato sauce over it, and top with shrimp. Serve immediately.
