CHEX CARAMEL CORN RECIPE - (4.3/5)

Chex Caramel Corn Recipe - (4.3/5) image

Provided by Foodiewife

Number Of Ingredients 10

7 cups Chex cereal (corn, rice or combination)
2 cups Cheerios cereal
6 cups Popped corn*
3 cups Chinese crispy noodles
1 to 2 cups peanuts, cocktail style
1 cup butter (don't use margarine or tub spread products)
6 tablespoon light corn syrup
1 1/8 cup brown sugar, packed
3/4 teaspoon vanilla
1/3 cup popcorn kernels = about 6 cups popped corn

Steps:

  • Heat oven to 250°F. Remove and discard unpopped kernels from popped popcorn. Mix cereals, popcorn, Chinese noodles and peanuts in a large roasting pan; set aside. Heat butter, sugar, corn syrup and to boiling in a 2-Quart saucepan* over medium heat, stirring frequently. *or you can heat in a microwave, if you prefer. Add the vanilla (I prefer to add this once the caramel is hot, to keep the vanilla flavor more intense.) Pour over cereal mixture, stirring until evenly coated. Bake 45 minutes, stirring every 15 minutes. Spread on waxed or parchment paper to cool, stirring occasionally to break up. Store in an airtight container. Tasting notes: I would think that substituting pecans or even cashews for peanuts would be really good, too!

Tips:

  • Use fresh popcorn. Stale popcorn will not caramelize properly and will result in a chewy, tough snack.
  • Make sure the sugar is completely dissolved before adding the popcorn. If the sugar is not dissolved, it will crystallize and the caramel will be grainy.
  • Cook the caramel over medium heat. High heat will cause the sugar to burn and the caramel will be bitter.
  • Stir the caramel constantly. This will help to prevent the sugar from burning and will also help to ensure that the caramel is evenly cooked.
  • Add the popcorn to the caramel as soon as it is ready. If the caramel is allowed to cool, it will harden and it will be difficult to coat the popcorn.
  • Spread the caramel corn out on a baking sheet to cool. This will help to prevent the caramel from sticking together.
  • Store the caramel corn in an airtight container at room temperature. Caramel corn will keep for up to 2 weeks.

Conclusion:

Chex caramel corn is a delicious and easy-to-make snack that is perfect for parties, movie nights, or just a sweet treat. With a few simple ingredients and a little bit of time, you can make a batch of homemade caramel corn that is sure to please everyone. So next time you're looking for a sweet and crunchy snack, give chex caramel corn a try!
