2 1/4 cup all-purpose flour
1/2 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon kosher salt
1 1/2 cups granulated sugar
2 ounces cream cheese (cut into chunks)
6 tablespoons unsalted butter (melted)
1/3 cup canola or vegetable oil
1 egg
1/2 cup maraschino cherries (finely chopped, and squeezed to remove excess juice)
1 tablespoon maraschino cherry juice
1 teaspoon almond extract

Steps:

  • Preheat the oven to 350 degrees F.
  • In a medium bowl, whisk together the flour, baking soda, baking powder and salt.
  • In a large bowl, combine the sugar, cream cheese, and melted butter until smooth.

1 cup shortening
1 cup sugar
1 cup packed brown sugar
2 large eggs, room temperature
3/4 teaspoon almond extract
2-1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2-1/2 cups sweetened shredded coconut
3/4 cup chopped almonds or pecans, optional
1 jar (16 ounces) maraschino cherries, drained and halved

Steps:

  • In a large bowl, cream shortening and sugars until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in extract. Combine flour, baking soda and salt; gradually add to the creamed mixture and mix well. 2/3 cup coconut sugar
1/4 cup honey, such as thyme or clover
2 tablespoons limoncello or freshly squeezed lemon juice
1 teaspoon lemon zest (from 1 large lemon)
1/4 teaspoon kosher salt
1 large egg, at room temperature
3 tablespoons cherry jam

Steps:

  • Preheat the oven to 350 degrees F.
  • Spread the almond flour on a rimmed baking sheet and bake, stirring halfway through, until golden brown and toasted, 10 to 15 minutes. Immediately add it to a medium bowl to cool for 5 minutes. Line the baking sheet with a piece of parchment paper and set aside.
