1/4 cup butter, melted
2 cups packed light brown sugar
2 large eggs
1/4 teaspoon salt
2 cups sifted flour (sift before measuring)
1 teaspoon vanilla extract
1 cup pecans

Steps:

  • Combine butter and brown sugar in mixing bowl and beat well.
  • Beat in eggs, one at a time.
  • Add salt and sifted flour, mixing well.
  • Stir in vanilla and pecans.
  • Pour into a greased and floured (or use Bakers' Joy) 9x13-inch cake pan.
  • Bake at 325 degrees for 30 minutes or until cake tests done.
  • Cut into bars.

1 box duncan hines classic carrot decadent cake mix
1 c hot tap water (for hydrating carrots and raisins) in the box
1/2 c packed brown sugar
1/3 c light corn syrup
2 c quick cooking oatmeal
1/2 c coconut (optional)
1/2 c nuts (optional)
3 Tbsp butter

Steps:

  • 1. Preheat oven to 350° Add carrots and raisins to hot tap water. Allow to hydrate for a minimum of 5 minutes. Drain and squeeze out excess water
  • 2. In small sauce pan, melt brown sugar, corn syrup and butter on medium. Bring to a boil and cook for 3 minutes. Remove from heat
  • 3. To a mixing bowl add the cake mix, drained carrots and raisins(are in the box), coconut, nuts, oatmeal and egg. Mix by hand until blended
  • 4. Pour in the melted brown sugar, butter mixture and stir until well mixed
  • 5. Spread evenly into a 9x13 inch, lightly greased baking pan
  • 6. Bake for 30-35mins.
  • 7. Remove from oven and immediately press down on surface of hot cooked bars with spatula.
  • 8. Cool and refrigerate before cutting.

If you use a thin one, it will cause problems when setting.

2/3 cup evaporated milk, divided
12 tablespoons butter or 12 tablespoons margarine, melted
12 ounces thick butterscotch sundae sauce or 12 ounces bordeaux syrup
3 tablespoons flour
12 ounces semi-sweet chocolate chips

Steps:

  • Heat oven to 350.
  • Grease a 9x13" pan.
  • Beat cake mix, 1/3 cup evaporated milk and melted butter rapidly for 1 minute.
  • Press half of the mixture into the bottom of the pan.
  • Bake for 15 minutes or until set.
  • In medium bowl, mix caramel (butterscotch or bordeaux syrup), flour, and remaining evaporated milk.

2 jar(s) sweet coconut strings in heavy syrup
2 1/2 c mochiko sweet rice flour
1 c brown sugar, firmly packed
1 Tbsp vanilla extract

  • 1. 1 Preheat oven to 375°F Line a 12" x 17" x 1" baking sheet with parchment paper. 2 2. In a large mixing bowl, beat coconut milk, condensed milk, and melted butter until combined. Add eggs, one at a time, and beat until combined. Do the same with both jars of macapuno strings. Gradually beat in mochiko flour. Follow that with the brown sugar and add vanilla extract and beat until combined. 3 3. Pour batter into lined cookie sheet. Bake until golden brown and sides are slightly dark brown, about 45-50 minutes. 4 4. Once cooled, loosen the sides, cut into squares and place it in a serving tray. Discard parchment paper.
