3 c flour
1 1/2 tsp salt
1 tsp baking soda
1 1/2 tsp cardamom
1 c softened butter
1 1/2 c brown sugar
1/2 c sugar
2 large eggs
1 tsp vanilla
1 tsp almond extract
3 c dried apricots, chopped
1 c walnuts (if desired)

Steps:

  • 1. Preheat oven to 375 degrees.
  • 2. Sift together first four ingredients and set aside.
  • 3. Cream butter and sugars until light and fluffy. Add eggs and extracts until blended.
  • 4. Incorporate flour mixture until mixed. Fold in apricots and walnuts (optional).
  • 5. Drop by rounded tablespoon or cookie scoop onto greased cookie sheet, or use parchment paper.

2 cups butter, softened
2-1/2 cups confectioners' sugar, divided
1 teaspoon ground cardamom
1/8 teaspoon salt
1-1/2 teaspoons almond extract
3-3/4 cups all-purpose flour
1 cup finely chopped walnuts

Steps:

  • Preheat oven to 350°. Cream butter, 1-1/2 cups confectioners' sugar, cardamom and salt until light and fluffy. Beat in extract. Gradually beat in flour.
