I started seeing this delightful little scoop of heaven on the edge of my plate at a few of the Mexican restaurants around town, so I decided make it at home. This recipe is actually the recipe they use at Chevy's, which I found published in the local paper.

Number Of Ingredients 9

5 tablespoons margarine, softened
1/4 cup Masa Harina
1/3 cup granulated sugar
1/2 cup water
2 cups corn kernels, fresh or frozen, thawed, divided
1/2 cup cornmeal
1 teaspoon baking powder
1/2 teaspoon salt
2 tablespoons plus 1 teaspoon milk

Steps:

  • In a small mixing bowl, mix the margarine, masa and sugar using an electric mixer until light and fluffy, about 1 minute. In a blender container, blend half the corn kernels with the water until smooth. Combine this mixture with the margarine mixture, stirring well. Add the remaining corn kernels, corn meal, baking powder, salt and milk and mix well. Pour the corn mixture into an 8-inch square baking pan. Tightly cover with plastic wrap and steam by setting atop a medium saucepan of water on top of the stove. Bring water to a boil and steam corn mixture for 50 minutes to one hour (check to see whether you might need to add more water), until a wooden pick inserted in the center comes out clean. Tomalito should have a smooth, moist texture. Note: The pan must be tightly wrapped at all times.

Tips:

  • Choose the right corn. Fresh corn on the cob is the best choice for this recipe. Avoid using frozen or canned corn, as it will not have the same flavor or texture.
  • Cut the corn off the cob correctly. Use a sharp knife to cut the kernels off the cob. Hold the cob vertically and cut downward, starting at the top. Be careful not to cut too deeply into the cob, as you don't want to include the tough inner core.
  • Use a food processor to mash the corn. This is the easiest way to get a smooth and consistent mash. If you don't have a food processor, you can also use a potato masher or a fork, but it will take a little more effort.
  • Add your desired seasonings. The recipe calls for salt, pepper, and garlic powder, but you can also add other seasonings to taste. Some popular options include chili powder, cumin, and paprika.
  • Cook the corn mash over medium heat. This will help to prevent the corn from burning or sticking to the pan. Stir the corn frequently to ensure that it cooks evenly.
  • Serve the corn mash immediately. This dish is best enjoyed fresh and hot. You can serve it as a side dish or as a main course. It also makes a great addition to tacos, burritos, and salads.

Conclusion:

Chevy's Corn Mash is a delicious and versatile dish that is perfect for any occasion. It's easy to make and can be tailored to your own taste preferences. Whether you serve it as a side dish, a main course, or an ingredient in another dish, this corn mash is sure to be a hit.
