I love Old Bay Seasoning and was looking for new ways to use it. I had several "coastal creations" as I call them and this one is one that people enjoy the most out of them. And by the way, your house is going to smell like a seaside seafood restaurant while this is cooking!

Time 40m

Yield 8

Number Of Ingredients 8

8 skinless, boneless chicken breast halves
1 pinch salt and ground black pepper to taste
2 cups peach preserves
3 tablespoons extra-virgin olive oil
2 tablespoons soy sauce
1 tablespoon finely chopped garlic
1 tablespoon Dijon mustard
4 ripe peaches, halved and pitted

Tips:

  • Choose the right cut of chicken: For grilling, boneless, skinless chicken breasts or thighs are good choices. They cook quickly and evenly.
  • Brine the chicken: Brining the chicken in a mixture of water, salt, and sugar helps to keep it moist and flavorful. You can brine the chicken for as little as 30 minutes or up to overnight.
  • Use a flavorful marinade: A marinade not only adds flavor to the chicken, but it also helps to tenderize it. You can use a variety of marinades, such as olive oil, lemon juice, garlic, herbs, and spices.
  • Preheat the grill: Preheat the grill to medium-high heat before cooking the chicken. This will help to prevent the chicken from sticking to the grill.
  • Cook the chicken over indirect heat: If your grill has a lid, cook the chicken over indirect heat. This will help to prevent the chicken from drying out.
  • Use a meat thermometer: The best way to ensure that the chicken is cooked through is to use a meat thermometer. Insert the thermometer into the thickest part of the chicken and cook until it reaches an internal temperature of 165 degrees Fahrenheit.
  • Let the chicken rest: After grilling, let the chicken rest for a few minutes before serving. This will help the juices to redistribute throughout the chicken, making it more tender and flavorful.

Conclusion:

Chesapeake grilled chicken is a delicious and easy-to-make dish that is perfect for a summer cookout. With its flavorful marinade and tender, juicy meat, this chicken is sure to be a hit with your family and friends. So next time you're firing up the grill, give Chesapeake grilled chicken a try.
