1 can (14 oz.) condensed milk
1/8 teaspoon salt
1 teaspoon vanilla extract
1 cup chopped candied cherries

Steps:

  • Gather the ingredients.
  • Prepare an 8 x 8-inch cake pan by lining it with aluminum foil and spraying the foil with cooking spray .

1 can (14 ounces) sweetened condensed milk
2 cups semisweet chocolate chips
1/2 cup coarsely chopped almonds
1/2 cup chopped candied cherries
1 teaspoon almond extract

Steps:

  • In a microwavable bowl, combine milk and chocolate chips. Microwave on high until chips are melted and mixture is smooth when stirred, about 1 minute. Stir in almonds, cherries and extract. Spread evenly in a greased 8-in. square pan. Cover and chill until firm. Cut into squares. Store, covered, in the refrigerator.

2 teaspoons plus 1/4 cup butter, divided
2 cups sugar
1 cup half-and-half cream
1/4 cup light corn syrup
1/2 teaspoon salt
1 cup miniature marshmallows
1 teaspoon vanilla extract
1/2 cup pecan halves
1/3 cup red candied cherries
1/3 cup green candied cherries

Steps:

  • Line an 8-in. square dish with foil and grease the foil with 2 teaspoons butter; set aside., In a large heavy saucepan, combine the sugar, cream, corn syrup, salt and remaining butter. Bring to a boil over medium heat, stirring until sugar is dissolved. Cook over medium-low heat, without stirring until a candy thermometer reads 240° (soft-ball stage). Remove from the heat; stir in marshmallows and vanilla., With a wooden spoon, beat until mixture begins to lose its gloss, about 10 minutes. Fold in pecans and candied cherries. Pour into prepared pan. Refrigerate for 2 hours or until firm., Using foil, lift fudge out of pan. Discard foil; cut fudge into 1-in. squares. Store in an airtight container in the refrigerator.

Number Of Ingredients 8

1 cup walnuts, toasted, chopped
3 cups granulated sugar
1 cup whipping cream
1/2 cup unsalted butter
1/4 cup light corn syrup
8 ounces premium white baking chocolate, chopped
1 teaspoon vanilla extract
1 cup dried cherries, chopped

Steps:

  • Spray a 9"x9" pan with nonstick cooking spray, then spray the inside of a heavy large saucepan.
  • In the prepared saucepan, combine sugar, cream, butter & syrup, then cook over medium heat until sugar dissolves & mixture comes to a boil, stirring freuently. Re-incorporate any sugar crystals that accumulate on the sides of the saucepan.
  • Attach a candy thermometer to side of pan, making sure bulb is submerged in sugar mixture, BUT NOT TOUCHING BOTTOM OF PAN!
  • Comtinue cooking about 6 minutes or until sugar mixture reaches soft-ball stage (234 degrees F) on candy thermometer, stirring frequently.
  • Remove from heat & let stand 10 minutes ~ DO NOT STIR!
  • Add white chocolate & vanilla, then stir until chocolate is melted & mixture is smooth, about 1 minute.
  • Stir in cherries & walnuts, then spread evenly in prepared pan.
  • Score into 64 squares while fudge is still warm.
  • Refrigerate until firm, then cut along scored lines, separating into squares.

After making Sam#3's Recipe#305332, I liked it so much that I had to try different variations on the recipe, and this is one that I really like! (Posted with permission). Cook time is chill time.

15 ounces white chocolate chips
1 (14 ounce) can sweetened condensed milk
1 1/4 teaspoons almond extract
3/4 cup glace cherries, cut into eighths
glace cherries, to top (optional)
plastic wrap (cling film)

Steps:

  • Put the white chocolate chips and sweetened condensed milk in a saucepan and warm over a very low heat, stirring continuously until the chocolate has melted and the mixture is smooth. Remove from the heat.
  • Stir in the almond extract and then the glace cherries.
  • Line a loaf pan with cling film (saran wrap) and pour the warm fudge mixture inches.
  • Chill in the fridge for at least 3 hours, until completely set (ideally overnight).
  • Then turn out of the pan and serve (this is a soft fudge so is best served slightly chilled).
  • NB If desired, you can quarter extra glace cherries and scatter them over the top of the fudge before chilling to make it look a little more colourful!

This, my favourite fudge recipe,is from an old Good Housekeeping Christmas Cook Book dated 1959. It's a little time consuming to make but well worth the effort; and the addition of dates really does make this fudge special. Prep time includes resting period before being spread into pan.

3 cups sugar
1/4 teaspoon cream of tartar
1/4 teaspoon salt
1 cup light cream
1 tablespoon butter
1 1/2 teaspoons vanilla
1/2 cup chopped walnuts
1/4 cup finely cut up pitted dates
1/4 cup finely cut up candied cherry

Steps:

  • Grease 8"x8" pan.
  • In 2 quart saucepan, combine sugar, cream of tartar, salt and cream, stirring well.
  • Cover pan; bring to a boil.
  • Boil 1 minute, or until all sugar crystals on sides of pan have melted.
  • Remove cover (If using a candy thermometer, set in place).
  • Continue cooking, without stirring, over gentle heat (I use medium-low) to 238 degrees, or until a little mixture in cold water forms a soft ball.
  • Remove from heat; drop in butter;do not stir.
  • Cool, without stirring, to 110 degrees, or until outside of pan feels lukewarm to the touch.
  • Add vanilla.
  • With heavy spoon, beat mixture until it loses its gloss and a small amount dropped from spoon holds it's shape.
  • Quickly add nuts and fruits and pour into pan.
  • Spread quickly and evenly.
  • Cool and cut into squares.
