Provided by Ellie Krieger

Time 20m

Yield 4 servings

Number Of Ingredients 10

3 1/2 cups water
1/4 teaspoon salt, optional
2 cups old-fashioned oats
1/2 cup raisins
1/2 cup walnuts, coarsely chopped, optional
1/4 teaspoon vanilla extract
Pinch nutmeg
2 tablespoons dark brown sugar, plus more, to taste
1 cup lowfat milk, divided
1/8 teaspoon ground cinnamon

Steps:

  • In a medium saucepan, bring the water and salt to a boil. Stir in the oats and raisins, reduce the heat to low and simmer, stirring occasionally, uncovered, for 5 minutes.
  • In the meantime, place nuts, if using, in a dry skillet over a medium-high flame, and toast, stirring frequently, until golden and fragrant, about 5 minutes. Set aside.
  • When the oats are cooked remove pan from the flame and stir in the vanilla and nutmeg. Swirl in the brown sugar and place the oatmeal in serving bowls. Pour 1/4 cup of milk on top of each bowl, and top with toasted nuts and a sprinkle of cinnamon.
  • Note: For a quicker version using quick cooking or plain instant oatmeal: Cook the oatmeal according to the directions on the package. Stir raisins, brown sugar, and nutmeg into the cooked oatmeal. Top with milk, nuts (toasted or un-toasted) and cinnamon.

KITCHEN SINK COOKIES

Applesauce fills in for some of the butter and oil in Ellie Krieger's cookies, reducing the fat and keeping the cookies moist. Apricots and cherries lend a little natural sweetness.

Time 53m

Yield 18 to 20 cookies, (about 2 cookies per serving)

Number Of Ingredients 15

2 tablespoons unsalted butter, softened
2 tablespoons canola oil
1/3 cup light brown sugar
1/4 cup applesauce
1 egg white
1 teaspoon vanilla
2/3 cup whole-wheat pastry flour
1/2 cup oatmeal
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
1/4 cup chopped dried cherries
1/4 cup chopped dried apricots
1/4 cup lightly toasted walnuts
2 ounces dark chocolate, cut into chunks
Cooking spray

Steps:

  • Preheat oven to 375 degrees F.
  • Combine butter, oil and brown sugar in the bowl of a stand mixer and mix on high speed, stopping occasionally to scrape down bowl, until mixture is light and fluffy, about 2 minutes. Add applesauce, egg white and vanilla and mix to combine. Add flour, oatmeal, salt and cinnamon and mix just until just combined. Add cherries, apricots, walnuts and chocolate and mix to combine.
  • Spray 1 baking sheet with cooking spray. Using 1 tablespoon cookie dough at a time, roll into balls and place 2-inches apart on baking sheet. Press cookies down with the palm of your hand to flatten slightly, as cookies will not spread as much as cookies with more butter. Bake for 12 to 14 minutes, or until lightly browned but still soft. Remove from oven and cool on racks.

CHERRY VANILLA OATMEAL

From foodnetwork.com Copyright Ellie Krieger, All rights reserved I like to use the old fashioned oats that take 30 minutes to cook. I usually make a lot and then separate it into servings and grab them for breakfasts throughout the week.

Tips:

  • Use fresh cherries: Fresh cherries add a burst of sweetness and tartness to the oatmeal. If fresh cherries are not available, you can use frozen or dried cherries.
  • Pit the cherries: Before adding the cherries to the oatmeal, be sure to pit them. This will help to prevent the oatmeal from becoming too tart.
  • Use a variety of oats: You can use rolled oats, steel-cut oats, or quick-cooking oats in this recipe. Rolled oats will give the oatmeal a chewier texture, while steel-cut oats will give it a more hearty texture. Quick-cooking oats will cook the fastest, but they will also have a softer texture.
  • Add your favorite toppings: Once the oatmeal is cooked, you can add your favorite toppings. Some popular toppings include brown sugar, maple syrup, honey, nuts, seeds, and fruit.

Conclusion:

Cherry vanilla oatmeal is a delicious and nutritious breakfast option. It is packed with fiber, vitamins, and minerals. It is also a good source of antioxidants, which can help to protect your cells from damage. This recipe is easy to make and can be tailored to your own preferences. Whether you like your oatmeal sweet or savory, thick or thin, this recipe is sure to please.
