QUICK AND EASY CHERRY TARTS
Making the large cherry tart works well when the whole family is here. But this weekend I only have my sister and her husband(he does not like coconut) and my one son who does not like cherry pie filling. At any rate I decided to try a short cut recipe for the cherry tart with the pie filling. I was going to use my dessert cup...

- 4. Bake for abut 20 minutes until the coconut is brown on the ends. Let cool completely before trying to remove.
- 5. My brother in law does not like coconut so I put white chocolate chips on three for him. My son does not like cherry pie filling but loves macaroons so I just put Macaroons into two of the muffin tins. I used Maraschino cherry juice to color the coconut.
CHOCOLATE CHERRY CHEESE TARTS
These pretty little tarts are reminiscent of chocolate covered cherries...only the chocolate is inside the cheesecake! Sometimes, I make them even smaller, in those tiny little tart pans with just one cherry on top. But, hey...it's Valentine's Day, and these are just the perfect size to satisfy your Sweetie's sweet tooth!

Steps:
- 1. For Cheesecake filling: Blend cream cheese and sugar. Add chocolate syrup, vanilla, flour, egg and egg yolk; blend well. Divide evenly into 12 graham crust tart pans. Bake at 375 degrees for 15-17 minutes. Remove from oven and cool for 20 minutes.
- 2. For Topping: Combine sour cream, sugar and vanilla. Spread a heaping tablespoon on top of each tart. Chill for 1 hour. Before serving, top each tart with a spoonful of the pie filling (I like to include 3 cherries).
Tips:
- For a crispier crust, use a combination of butter and shortening in the dough.
- To prevent the filling from bubbling over, make sure to cut slits in the top crust before baking.
- If you don't have a pie plate, you can use a baking dish instead. Just make sure to adjust the baking time accordingly.
- For a sweeter filling, add a tablespoon or two of sugar to the cherries.
- To make a glaze for the tarts, combine powdered sugar and milk until smooth. Drizzle the glaze over the tarts after they have cooled.
