- Into the bowl of your stand mixer, place butter and 1 cup of powdered sugar. Mix to combine. Add another cup of powdered sugar, followed by milk. Mix to combine. Add remaining of powdered sugar, cherry emulsion and food coloring. Mix to combine.
- Using a 2 teaspoon cookie scoop, scoop cherry mixture into balls and place onto a sheet pan. Once all mixture has been rolled into balls, place into freezer to chill for 2 hours or until solid.

- Take 125g of the chocolate and grate it finely (Use a piece of paper to hold the chocolate so that it doesnt melt under your fingers). Chop the remaining 25g into small pieces.
- Cream the butter (I used a spoon, but you may also use a hand-mixer). In portions add the grated and chopped chocolate as well as the chocolate/cocoa powder and the rum.

- Heat heavy cream, butter and sugar in medium saucepan over medium heat to a gentle boil. Remove from heat. Add chopped chocolate and let stand 30 seconds. Whisk until smooth. Stir in cognac.
- Place saucepan in bowl of ice water. Beat chocolate mixture until it thickens, holds its shape and is firm enough to pipe, using hand-held electric mixer at medium speed.
- Transfer ganache to pastry bag fitted with 1/2-inch plain tip (such as Ateco #6). Pipe 1-inch mounds onto baking sheet. Freeze truffles for 15 minutes or until just firm enough to shape.
- With hands dusted with confectioners' sugar, gently roll ganache into 1-inch balls. Refrigerate about 10 minutes or just until firm.
